CRISPY PEPPERONI CHIPS!! A SURPRISING SNACK!!
Today we are making some pepperoni chips or crisps. I will be using these in an upcoming video as an addtion to a pizza snack mix that I will be sharing with some friends who are moving away. These are the perfect addition to a crunchy snack mix that will be great for a road trip! These chips are super easy to make! You don't even need a recipe! When you taste these crispy, salty rounds of delight, you will want to make more. When your significant other gets a taste, you will be in trouble because you will be forever baking pepperoni chips!
These are super easy. Just line a baking sheet or two with two layers of parchment paper. Lay out your pepperoni in a single layer and bake at 400 degrees for 10 to 12 minutes. Start with 10 minutes then if you need the extra time pop them back in the oven. You will know they are done when you can hear them crackling in the oven and when you check them the centers look dry and the slices have shrunked to about half their size.
Remove the pans from the oven and then gently place a layer of paper towel on top and gently blot them to help absorb the remaining grease that the parchment did not. Allow these chips to cool on the baking sheet then place on more paper towel to absorb even more of the oil.
I stored mine in a plastic container lined with paper towel and placed more paper towel between each layer so that the oil could be caught. I think its best to catch as much of that oil as possible. Because I am going to be using my chips in a snack mix that will contain crackers and other crispy treats, Some of that oil will add to the flavor of my snack mix but I don't want too much.
These are ready to eat as soon as they are cooled, but be warned, you may not think crispy pepperoni sounds good, but it is! It's so good! I hope you give this a try sometime soon and I hope you love it!

CHOCOLATE CHIP MUFFIN MIX!! GIFT IN A JAR!! THE HOLIDAYS ARE COMING!!
Let's continue with a breakfast theme for our next gift in a jar idea! Today we are sharing this delicious and simple pantry staple buster, chocolate chip muffin mix! These are quick, simple and delicious. They qualify for breakfast, snack or dessert and everyone is going to love them! This is also a versatile base for whatever you choose to use as an add in! Do you want to use some nuts? Add them in. Want cranberries instead? How about dried cherries? You make these yours and everyone will love them!
These start off like the rest. Mixing the salt, baking powder and baking soda into the flour mixture, then pouring into a quart jar. Tap this down to level so that all your ingredients will fit in the jar. Then add some old fashioned rolled oats on top along with layers of granulated and brown sugar. I always like to add the brown sugar to the top to sort of seal in the mixture to avoid ruining the layers. The striations are part of the fun and beauty of giving this gift! Next pop in some chocolate chips and you're done! Put a lid on it and decorate as you like!
Be sure to include the printable gift tag with your jar or if you are giving this in a gift bag, be sure to slip it in so the recipient knows how to prepare these delicious muffins. You don't have to use a mason jar if they are a precious commodity for you. You can layer this in a gusseted cellophane bag or in a recycled jar that has been washed and cleaned well. You can even spray paint or chalk paint the lid to make it pretty.
These muffins are easy to prepare with ingredients that people will already have on hand such as milk, eggs and oil. Just mix them up, scoop them and bake them and boom! Delectable muffins for breakfast, snack or dinner!

Salted Caramel Pretzel Healthy Shake:
1 scoop Dulce De Leche Formula 1
1 scoop Pralines and Cream Formula 1

HOMEMADE MAYONNAISE!! HOW TO MAKE MAYONNAISE!! NOREEN'S KITCHEN BASICS!!
Time to get back to basics. If your pantry is a little light these days but you still have some things on hand and you want to enjoy the things you still love, knowing how to make things from scratch is the best possible thing! Today we are going to share with you how to make mayonnaise from scratch! This may seem like a difficult and daunting task but that could not be further from the truth! Homemade mayo is super easy and it's made even easier when you have the right tool for the job! So, immersion blenders in hand and let's get this ball rolling!
Mayonnaise is not one of the original French mother sauces. Those being the Voulate', Bechamel, Espagnole, Hollandaise and Tomato. Mayonnaise is the unofficial fifth mother sauce, in my opinion. As ubiquitous in our modern day fridge as that bottle of ketchup but we pay it so little respect! Making your own, just once will show you exactly what you are missing. Do not get me wrong! The commercial mayonnaise is awesome and we all have our favorites, but homemade silky, eggy mayo is a treasure to behold and you will agree when you give this a try!
The best part here is that you probably have all the things you need. That being three, four or five. Depending on how flavorized you want to go. 1 cup of neutral oil, 1 large egg, a good dollop of Dijon mustard or a teaspoon of dry mustard will work as well as some salt. You can stop there and that is where I stopped for the purposes of this video.You can also add a splash of either red or white wine vinegar to give this a bit of tang. Aside from that, your options are sort of endless! But I will touch upon that later.
I am using an immersion blender today because I find this to be the most effective and quickest way to create delicious, velvety homemade mayonnaise. In literal seconds you go from a weird science experiment to a smooth, creamy condiment. If you don't have an immersion blender, you can certainly use a regular blender to achieve a similar result. However you will want to add your egg, salt and mustard to the carfe then slowly stream in the oil as the blender is running. Immersion blenders are not expensive and you can pick one up at just about any big box store. Here is the one I am using: https://amzn.to/3cV5F4V
Start by placing your oil, egg, mustard and salt and vinegar if you are using it in a jug or deep bowl. Place the immersion blender on the bottom of your vessel and pulse a couple of times to get things going, they go full force and gently pull up as you do. You will see the mixture become opaque and creamy. Keep mixing for a few more seconds until you are satisfied with the consistency. Voila'! Mayonnaise! Now you can put this in a jar or airtight container and it will last for up to one week. Do not worry about the raw egg. The mustard and the salt along with the emulsification process have taken care of that. Be sure to obtain the freshest eggs possible to avoid any contamination issues.
This can easily be turned into a curried mayo by adding your favorite curry powder blend along with a generous dollop of chutney for a flavorful sandwich spread. Add in some chipotle peppers for a chipotle mayo, some roasted garlic for a delicious aioli to dip roasted vegetables in. Use this mayonnaise to make Louis sauce for dipping freshly steam shrimp or use it as a base for homemade Thousand Island or Russian dressing. The possibilities are as endless as your imagination!

EASY HOT FUDGE SAUCE!! VALENTINE'S DAY DESSERT PERFECTION!!
Today I am sharing the easiest and most delicious hot fudge sauce you could ever make! This one is sure to be a hit with family this coming Valentine's day or anytime you need a chocolate treat! I have made this in the past for an ice cream social at church and the reviews were amazing. Everyone loves this sauce. Of course you can make this in bulk, but I have sized this down a bit to be more family friendly. Use this to make some sweetheart sundaes for your family this week and be sure to remember the festive sprinkles!
This recipe has only a few ingredients. You most likely have them on hand if you keep baking ingredients in your pantry on the regular. Some semi sweet or milk chocolate chips a can of sweetened condensed milk, be sure it's not evaporated or you will be sad. Adding in a bit of butter, water salt and vanilla extract and you have a smooth, silky and delicious hot fudge sauce to rival any that you have tried in the past!
Add everything but the extract to the saucepan and stir constantly over medium heat until everything is melted and well incorporated. You will see the mixture change texture a bit and become "fudgy" and the spoon will drag through leaving ribbons behind. Once everything is melty, smooth and fudgy, remove from the heat! You do not want this to simmer or even come close to boiling or it will seize. Then add in your vanilla and stir well. Now you are ready to serve or put in an airtight container. I use a mason jar. You can dip into this right away or you can let it cool a bit before making your sundaes. Then drape of your favorite kind of ice cream and enjoy!
Is there a favorite sundae you love? Just a scoop of vanilla with hot fudge is nice but up the ante a bit and think about your favorite ice cream joint and their offerings. When you go out what you you love? How about your own homemade version of a DQ Peanut Buster Parfait? Layers of ice cream, hot fudge and salted Spanish peanuts. My favorite is the DQ Pecan Mudslide. Vanilla ice cream topped with hot fudge, hot caramel and salted, roasted pecans. Oh Boy! I also love my hot fudge sundae made with strawberry ice cream for a sweet twist! Mix up the two and make a chocolate covered strawberry sundae with both hot fudge and strawberry topping! The possibilities are endless!
This topping is not just to make sundaes with. If you allow this to cool you can use it as a filling for cakes. Just a filling, between layers. Like the decadent fudge filling your favorite bakery puts in their layer cakes. You won't be disappointed! Just be sure to allow this to cool and even refrigerate overnight before attempting to fill a cake, otherwise it will be much too loose and may well ooze out the sides and make you sad. Delicious but sad.
I hope that this gives you a great option for making hot fudge the easy way. This really beats having to use a candy thermometer and boil hot sugar to the soft ball stage. The magic is in the condensed milk! You won't ever want to buy store bought again and that is always a good thing!

OLD SCHOOL COCKTAIL SAUCE RECIPE! | A REALLY RETRO HOLIDAY!
The holidays have begun in my world. Today is the launch of our holiday videos. Rather than separate Thanksgiving and Christmas, we have decided to simply go full throttle and do it up right. I hope you enjoy the fabulous retro recipes we plan to share this holiday season. Many of them will be from my late mother's own recipe box as a tribute to her favorite time of year.
Today we are making my favorite cocktail sauce. It is everything you want it to be. A bit sweet, a bit tangy and with just the right amount of spice and savory flavor. This is very reminiscent of a old time favorite cocktail sauce from the famous Bookbinders restaurant in Philadelphia. We love it and we enjoy it throughout the year, but especially during the holiday season when we entertain and share with friends. Perfect for a shrimp platter or cocktail or to serve with other seafood or in my case atop a delicious cold crab dip that will be coming soon to the channel!
I love this cocktail sauce recipe! It is one that my mom made growing up. It is perfect in it's simplicity and just the perfect addition to a shrimp cocktail or peel and eat shrimp platter for any holiday buffet or open house celebration. Make a big jar at the beginning of the season and you will be set for all the things that you want to enjoy it with!
This all starts out with a good quality ketchup. We use Heinz organic but you should use what you like. We also use Heinz chili sauce. This gives the cocktail sauce a lot of body and extra flavor. While you can make this sauce with all ketchup, I hope you will give the chili sauce a try because it adds so much to this! Then the usual suspects come by to play. Lemon juice, tabasco sauce, horseradish and Worcestershire. You can adjust the heat level to your preference but I do not recommend leaving out any of these ingredients because they are all integral to the end product. There will just be something missing if you leave it out.
This is, hands down the best cocktail sauce you can make. It is so much better than buying premade and it has such a fresh taste. You probably have everything you need to make this and even if you don't have fresh lemons and choose to use bottled lemon juice, no judgement here. I have done it and it tastes great!

CARNITAS SEASONING BLEND!! HOMEMADE CARNITAS SEASONING!!
Getting ready to slow cook some carnitas for tacos and burritos. So I thought it might be a good idea to make up a seasoning blend to make things super fast and easy! This carnitas seasoning blend is easy to put together using many spices you may already have in your pantry or on your spice rack. Its a great way to rotate out your spice stock and make some delicious slow cooked carnitas in the process! This will season up a delicious pork shoulder and turn it into moist, shredded, perfectly seasoned meat for your very own street tacos at home!
You all know I love me a spice blend! I love my spices and today we are tossing together some of them to make a delicious slow cooked pork carnitas recipe that we will be sharing very soon on the channel. We love Mexican food in our house and having grown up in Arizona was shown by many a native grandma how to do things just right. There are ways to take shortcuts, even if they are often frowned upon, but I think making a spice blend is a great way to ease the path and have everything ready to go in one jar when the need for street tacos hits!
This spice blend is a great way to use what you have. You can always substitute, add or take away from the things I have used. If you don't like a lot of spice, leave out the heat. If you like even more, add in what you like. This blend is super mild and pleasing to most people who only want to enjoy their taco and not remember it for days! If you know what I mean!
Mine starts out with salt, but if you are on a salt restricted diet feel free to leave it out. I went light on the salt because I actually will have everyone salt their own tacos when all is said and done. The amount used here is perfect for us. Then we use the usual suspects! Black pepper, cumin, sweet paprika but you can use hot or smoked if you desire, onion and garlic powder, oregano, marjoram, bay, thyme and in my case a bit of ancho chili powder. I am using ground bay leaf to make this super easy and avoid having to pull out a bunch of nasty leaves at the end of the cooking process.
Put all these ingredients into a jar and give it a good shake. Use to your hearts desire for carnitas, tacos, chicken, beef brisket or more. This would be a great seasoning for chips too! I love having a variety of blends on hand for when I want to make something taste authentic. Then I know I have what I need and don't have to pull out a bunch of jars, bottles and containers every time I want to do something!
This would also make a lovely addition to any holiday gift. A taco Tuesday gift basket would be awesome! This spice blend with a tortilla warmer, some taco racks, some jars of upscale salsa, taco sauce and other shelf stable taco fixings' all placed into an iron skillet and wrapped in cellophane and tied with a bow! That would make anyone super happy to receive!
This spice blend will stay fresh for up to six months if kept in an airtight container like a mason jar in a dark, cool and dry place. Give it a good shake before using because things can tend to settle.

SLOW COOKER PORK LOIN IN APPLE SAUCE!! DUMP & GO CROCK POT MEAL!!
Today it's beginning to actually feel like fall where I live. A lot better than a week ago when this video was filmed. But with fall upon us here in the states and beyond, it's no better time than to combine simple ingredients in the slow cooker for a delicious, warming meal. This slow cooked pork loin in applesauce fits that bill. Add a couple of delicious sides like egg noodles, spaetzel or rice pilaf and some root veggies or greens and you have a delicious heart warming, belly filling meal that will put smiles on your loved ones faces! They will just love this one!
This starts out so simple with a two to three pound pork loin. I like to buy them whole when they are on sale and cut them in half and freeze them. Since I live in the middle of a large pork producing area, pork is very affordable to us. You can also do this with chicken if you prefer and it will be just as delicious. I spread some minced garlic over the pork loin, sprinkled it with my homemade version of Szeged chicken rub seasoning and then added a sliced onion, a honeycrisp apple that I cut into wedges and poured over a jar of unsweetened organic applesauce. That's it!

I cooked this for about 7 hours on high in my slow cooker. All slow cookers are different. Mine tends to take a long time to get up to temp and then when it is off and running it tends to get out of control, cooking very hot. I often will turn mine down to low half way through and then off completely once the meat is up to temperature. I always take the temp on my pork and chicken with an instant read thermometer to ensure safety. Pork should be cooked to at least 145 degrees and chicken should be cooked to at least 165 degrees. Carry over cooking will happen, but make sure your protein is cooked to your liking as well as the preferred tenderness before turning off the cooker completely. You can let rest while you cook your sides and it will stay nice and hot.
As far as sides for this meal, I considered making some spaetzel but did not and opted for good quality egg noodles and fried up a head of Savoy cabbage with an onion, some garlic and instead of adding a chopped apple, like I usually do when frying cabbage, I ladeled in some of the cooking sauce from the slow cooker. It was amazing! These made for excellent choices to go along with this succulent pork loin.
This is also a great economical option for feeding your family. Truth be told, this fed my family for two full dinners for four. We had plenty of leftover sides so that made for an easy night of no cooking, a few days later. I love when that happens! You could easily prep this dish for a slow cooker freezer meal by adding all the ingredients to a zip top bag and freezing then just popping into the slow cooker before work and cooking on high for 8 to 10 hours from the frozen state. I will warn you though to refer to your slow cookers warranty because some to not recommend for frozen items to be placed in their units. I have never had a problem doing it, but some of the more expensive versions are more sensitive. Just a friendly warning.
As mentioned above, I think that this would be great made with boneless, skinless chicken breasts or thighs in place of the pork loin and you could also sub out nice bone in pork chops too if that is what you have on hand! Make it work for your family and use what you have on hand. Step outside that box and enjoy!

ALL PURPOSE CHICKEN RUB SEASONING!! SZEGED COPYCAT!!
Today I am sharing with you my best replication of my favorite chicken rub seasoning of all time! As many of you know I am a HUGE fan of the Pride of Szeged line of seasonings. I have every blend they have ever produced. I grew up watching my Hungarian grandmother and my mom use this brand of paprika all my life. About ten years ago I found that they had spice blends and have grown to love them. This is my best guess as to how to make your own version of this amazing rub at home!
To elaborate a bit, when I found that Pride of Szeged had many more offerings than just paprika, I was a very happy girl. I have amassed a collection of nearly all their offerings, or at least what I can tell is such. I have both their regular and hot paprika, garlic powder, chicken rub, steak rub, rib rub, fish rub pizza seasoning, poultry seasoning, apple and pumpkin pie spice as well as cinnamon and cinnamon sugar sprinkle. They are all in vintage style tins that sit on top of my stove in a wooden rack.
My problem is that these are few and far between. The purchasing opportunities are slim. Occasionally you can find these spices, some but not all in discount stores like TJMaxx or Marshalls. I do have an online outlet that used to sell them regularly but have since changed their brand lineup and only have the Szeged spices on a very limited basis. If I every have the situation where I cannot get the chicken rub I will be very sad. No it will not be the end of the world, but I would want to know how to make it myself. So here we are.
Reverse engineering a spice rub can be a daunting task. I poured a generous portion of the rub into a bowl and then sifted it to get the larger bits separated, which I placed on a plate and using a skewer examined each little bit to see if it was identifiable. For the most part I was able to determine each ingredient.
The recipe I have developed is my best guess, minus the fennel which I know is in there. Rick has a deep dislike for the flavor of fennel. I can take it or leave it. But if its in something he can detect it and in some cases, even though it may be a very small amount he can still find that licorice like taste in a bite from time to time. So it must go. If you like fennel, I suggest adding a teaspoon of the ground version to this blend.
The bulk of this rub is, as you may imagine, salt. You can adjust this to suit your needs or your personal taste. You can even eliminate the salt altogether if you are on a salt restricted diet. I have used canning salt and my finished product was a bit more salty than the original. That could be because of the type of salt I used. I would venture a guess that the commercial version uses table salt, which is not as salty as some other salts. So start with less and work your way up until you reach your sweet spot. Or salty spot as the case may be.
This blend has only a few, simple herbs and spices that come together in a way that is beyond compare. You can also choose to add some red pepper flake if you like or even a small amount of cayenne pepper if you like things a bit on the spicy side.
When reversing the blend I was surprised at the things I did not find such as black pepper, sage or parsley. I was uncertain about the celery seed, but since our family enjoys that flavor I added it. You may wish to omit if that is not something you enjoy. Overall I stuck with what I found. Of course, reading the label will help you with the big stuff. Theirs lists Paprika, garlic, basil salt and spices. So salt is not the first ingredient and that is a good thing.
