Easy Homemade Challah Bread
Get ready to make the most delicious homemade Challah Bread. Why wait for a special occasion to impress your friends and family. AND it makes the most delicious French Toast Too !
Ingredients:
3 1/4 cups of all purpose flour
2 1/4 tsp. of active dry yeast.
1/4 cup of sugar
1/2 tsp of salt
3/4 cup of whole milk
1/4 cup vegetable oil
3 eggs. 1 for brushing
heat oven to 350 degrees
mix dry ingredients then slowly add milk, oil, and eggs. Can add about 1/3 cup of raisins if desired. mix for 5 minutes
form into a ball.
lightly oil the outside , cover and let rise in a warm spot for 90 minutes.
divide in two. Then cut each piece into 3
stretch out each section to form a 14-16" rope. combine the 3 pieces pinch the end and make a braid. pinch and fold over the ends to keep from separating while baking.
Cover lightly and let rise for 45 min.
brush each loaf with with a mix of 3tbls. milk and 1 egg yolk.
Bake for 25-30 min.

Ny Style Pizza Dough Part 2. Stretching and Baking your Pizza
Part 2 of the Art of making the perfect NY Style pizza in your home oven. Learn how to stretch and bake your pie to get the best pizzeria results.
Set your oven to 550 degrees F.
place your pizza stone on the center rack and let heat for at least an hour after your oven reaches max temp.
Bake your pie for 6 minutes using your favorite pizza pan with just the sauce.
Remove from oven and add your toppings
place directly on to your stone and bake for additional 6-7 minutes until cheese starts to separate.
Pizza made with lots of toppings require a few more minutes of baking time.
Remember keep a close eye on it because all ovens are different.
Pizza Sauce :
Cento peeled whole San Marzano tomatoes
put in processor or grind to desired smoothness.
add 2 tablespoons of extra virgin olive oil
1 tsps. of salt
1-1/2 tsp of oregano
1 tsp of ground up fresh garlic
being to a light boil reduce heat and let cook down for 30 minutes uncovered.
Let Sauce Cool Completely before adding to your pizza dough.

Easy 4 Ingredient Bread recipe
This is the Easiest 4 ingredient Recipe for the tastiest crusty bread you've ever had.
You will need a Dutch oven pot with lid for best results. . But you can use any oven safe pot or pan
Recipe:
3 cups of Organic Unbleached All Purpose Flour (you can use non organic)
1 1/4 cups of warm water
1 teaspoon of active dry yeast
2 teaspoons of salt. ( if your using course salt use only 1 teaspoon)
Mix together water and yeast until you see yeast blooming (usually about 5-10 minutes)
Then add your 3 cups of flour (1 at a time while mixer is on low)
When dough is formed then add your salt.
I use my bread machine to mix dough for 5-7 minutes.
if you use a stand alone mixer, put your dough hook on and mix for 5 minutes.
( at this point you can add 1-2 tsps. of crushed garlic and 1 tsp. of rosemary for extra delicious flavor)
Dough will be very sticky.
Remove dough and place in a lightly floured container for 1 hour Covered tightly.
After 1 hour do the pull and fold ( wet your fingers a little if dough is sticking) making sure you pull and fold all the way around.
cover and set timer for 30 minutes.
Repeat pull and fold, cover, reset timer for 30 minutes
Pull and fold 2 more times with 30 minutes in between each.
Total is 3 hours with 1 hr. rise, and 4 pull and folds
preheat oven for 425 degrees
make sure you preheat you Dutch oven pot(uncovered) for at least 20 minutes before adding dough.
carefully remove dough from your container (put a little flour on your hands to help with the sticking)
Add a sprinkle of Semolina flour or regular flour on the bottom of the pot. You can use parchment paper for easy removal.
Dust the top of the dough with flour (you can score the top of the dough but its not necessary with all the pulling and folding)
Cover and place in the oven and bake for 35 minutes.
Then remove cover and bake for an additional 10 -15 minutes depending on how dark you want the outside crust.
Keep a close eye on the last few minutes since all ovens are different.
Then cool slightly, Slice and add your favorite spread.

Homemade English Muffins! Nooks and Crannies
Make your Favorite English Muffins using the best ingredients. Even with The Nooks and Cranny's. Homemade is always better.
Recipe:
Starter:
1 cup of bread flour
1 cup of warm water
1 tsp of active dry yeast
1/2 tsp. of sugar
Mix well and cover for 24 hours in the fridge
Take out of fridge 2 hours before using to get to room temp.
Making the dough:
4 cups of bread flour
2 tbsp. of cold butter
3/4 cup of warm water
1/2 cup of whole milk
1 tsp of salt
1 packet of dried yeast or 2 1/4 tsp
work cold butter into flour using a pastry cutter
then add starter mix together
then add your milk and water and yeast
then add salt
mix for 5 minutes using dough hook
cover and let rise for 1 hour
roll out and use cookie cutter to form muffins
cover baking sheets with parchment and sprinkle with corn meal place muffins on the sheet and cover and rest for 20 minutes
use md-hot frying pan lightly spray with oil or if using cast iron do not spray
sprinkle the tops of the muffins with corn meal and place muffins in the hot pan lightly brown on each side. Return to baking sheet.
pre heat oven to 400 f
bake muffins for 10 minutes
when cooled off pierce the sides with a fork and store in freezer or Eat!

3/4 cup Half and Half ( can use light cream)

Boil potato's till soft ( do the fork test)
drain water and use a masher or ricer to get the lumps out
Add butter, salt, and garlic
using a hand mixer slowly add half and half while mixing to make sure consistency is good.

salt and black pepper to taste

Date Night! Delicious Easy Shrimp Scampi With Toasted Breadcrumb Topping
This is what Shrimp Scampi should taste like! Topped with delicious toasted Bread Crumbs Served with Linguini. Not Just for Date night. But perfect recipe for 2.
Ingredients:
1/2 bag of raw shrimp (about 18) de-shelled and de-veined
marinate in fridge for 1/2hr to 1 hr with 1/4 to 1/2 teaspoon of lemon zest, pinch of black pepper and a drizzle of oilive oil.
place 2 tbs. of olive oil in a pan and place shrimp in and cook for 2-3 minutes making sure both sides turn light pink. Remove from pan and set aside.
in the same pan add about 1 1/2 to 2 tbs of butter
add 1 tbsp of crushed garlic
add 1/3 cup of white wine
add 1 teaspoon of roasted garlic (optional)
1/4 teaspoon of crushed red pepper (optional)
add 1/2 cup of chopped tomato. I used Campari tomato's. Can use grape or cherry
cook linguini 1 minute shy of cook time then add to pan. Add shrimp then stir together. Then Sprinkle bread crumb topping to serve.
Bread Crumb topping:
3 tbs of unseasoned bread crumbs
1 tbsp. of grated Parm or Romano cheese.
1/4 tsp of garlic powder
pinch of parsley
pinch of oregano
place in pan with 1/2 tbsp. of unsalted butter. sauté for 2 minutes

1/2 Top round Steak (can use 2 NY Strips)
For Bordelaise style sauce:
1 Chopped Shallot
1 tbs. unsalted Butter
2 Cups of beef stock
1/2 cup of Bordeaux wine. (can use Merlot or your favorite red wine)
1/4 teaspoon of Thyme
Salt and Pepper to taste
and a strainer
For the Steaks:
For the rub: 1/4 teaspoon each of crushed rosemary, coarse salt and black pepper
in the pan:
2 tbs of Olive oil
1 tbs unsalted butter
1 shallot sliced in half
2 cloves of garlic
For the Frites:
1 large russet potato
large bowl to fill and rinse fries and refrigerate
vegetable oil (can use peanut, canola for frying)

Arugula topped wit garlic infused olive oil, salt to taste
homemade Brioche style rolls topped with butter and garlic powder toasted in the oven at 375 for 10 minutes

This easy and Delicious Sausage and Peppers Recipe Served on Mozzarella Garlic Bread is sure to WOW your inner circle.
Ingredients:
4 Sweet Italian Sausage Links
1/2 to 2/3 cups of Chopped:
Red Peppers, Green Peppers, Orange peppers, Sweet Vidalia Onion, 1 chili pepper, and Red Onion
Sautee Vegetables in frying pan with a few tablespoons of Olive oil
add 1/2 teaspoon of salt
When Vegetables become translucent add your cut up Sausages
sautee a few minutes till no longer pink
then add 3 tablespoons. of tomato paste.
When the paste becomes fragrant add 2/3 to 1 cup of water
Stir together
Add 1 teaspoon of Oregano
1/2 teaspoon of Basil
1/4 teaspoon of black pepper
Salt to taste.
Cover on low heat for 15 minutes (last 5 minutes take cover off)
Garlic Bread
1 loaf of Italian bread sliced in half
Olive oil, garlic powder, oregano, basil, salt
Place on foil lined baking sheet and bake for 10 minutes on 350 degrees. (The 375 Temp on the video was too hot)
Remove and place sliced Mozzarella and put back in the oven for additional 5-10 minutes. Careful not to toast bread too much. Just want Mozzarella to melt.
Slice bread and spoon over sausage and peppers and Serve.
Makes at least 4 Generous servings. Or if using as an appetizer can make up to 10 if bread is sliced small slices.
Tip: to avoid getting to much oil from the sausage and olive oil. Tip your frying pan when serving. It will separate the oil from your sauce

Family Friendly Mini Meatloaf's Customized For Picky Eaters
In This Video I show you an awesome way to make mini meatloaf's for yourself and the picky eaters in your family. The individual portions are great for cooking for 1 or many. Freezer friendly for a quick meal. Here are 2 styles to try:
Ingredients:
Start with 1 Lb. Ground Beef
2 slices of fresh bread ground into bread crumbs
1 egg
1 extra large clove of garlic grated
1/2 tsp. parsley
1/4 tsp oregano
1/4 tsp. salt
1/4 tsp. red chili flakes (optional)
Mix together then divide into 2 equal parts
Take half the mix:
For Asian style:
add 1/2 tsp. of fresh grated Ginger
a pinch of sage
a pinch of rosemary
1 tsp. of soy sauce
Thai Chili sauce to glaze
sesame seeds
Take the other half of mix
For BBQ Style:
Add 2 tsp. of Worcestershire sauce
1/4 tsp. salt
1/4 cup of caramelized onions
sliced cheddar cheese
bbq sauce to glaze
Roll up like large meatballs and place in cupcake tray. Flatten out and add your glaze. Bake at 350 for 25-30 minutes

In this video I will make the perfect date night meal. My version of Veal Saltimbocca and The most delicious Pasta Alla Checca.
Ingredients:
4- very thin Veal cutlets (can use chicken)
8 slices of Prosciutto
Sliced thin Fontina cheese
Fresh Sage leaves
2 eggs beaten
1 cup of all purpose Flour
1 to 1 /2 cups of Panko bread crumbs
1/3 cup of White wine
2 tablespoons of butter
1 small lemon
salt and pepper to taste
Sicilian Checca Sauce:
This is an uncooked sauce or topping that can be paired with pasta or a nice slice of crusty bead or even pizza
1 container 10 oz. or 1 pint) of sweet Cherry tomato's (Can use grape tomato's)
1 handful of fresh basil leaves
2-3 chopped scallions
2-3 chopped garlic cloves
1 1/2 tablespoon of Romano or Parmesan cheese
3 tablespoons of Extra virgin Olive oil
3/4 teaspoon of lemon juice
1/2 teaspoon of salt (salt to taste)
Makes 1 1/2 cups or four servings if served over pasta.

Homemade Delicious Stuffed Eggplant.
In this video I will take the ordinary Stuffed Eggplant and turn it into the most delicious you've ever had.
Ingredients:
Eggplant (this recipe can use 2 whole eggplants making 4 servings)
Extra virgin Olive oil
Chopped onion 1/3 cup
5 Garlic cloves 1 used for bread crumbs
Passata (Raw Tomato Sauce)about 28-30 ounces
Salt to taste
Pepper to taste
Romano Cheese 1/3 cup total
Whole Milk Ricotta 1 cup
1 egg
Fresh Basil -hand full
Parsley-tbls if use fresh. 1/2 teaspoon dry.
Panko Style Bread Crumbs 1/2 cup
Cut end off slice in half and hollow out Eggplants
Drizzle shells generously with olive oil salt and pepper
Bake at 400 for 30-35 minutes
chop up eggplant and saute in olive oil adding chopped onion and smashed garlic and parsley. Add a pinch of salt to taste and add in posata when eggplant and onions are translucent. Add shredded basil cook for 20 minutes uncovered
Mix Ricotta, egg, Romano cheese (2 tbls), mix in sauce with eggplant about 1 cup. Stir together add salt and pepper. Fill eggplant boats
Bread crumb topping:
1/2 cup panko bread crumbs
grate 1 large clove of garlic
add remaining Romano cheese and salt to taste
Before adding bread crumbs chop mozzarella and add on top of sauce mixture then add seasoned bread crumbs.
Bake 20 minutes at 400 and your done!

This very easy and delicious pulled pork recipe will have your inner circle applauding.
Dry Rub ingredients:
1/3 cup brown sugar
1/2 tsp garlic powder
1/2 tsp. onion powder
1/4 tsp. of cayenne pepper
1/2 tsp. paprika
1/4 tsp. black pepper
1/2 tsp. of salt
1/8 tsp. of cumin
Dry rub mixture on Pork butt all sides
place in a hot skillet and brown all sides. place in a baking pan and cover tightly with foil set oven to 300 degrees and cook for 4-5 hours.
uncover a put your favorite BBQ sauce all over roast. Cover and place back in oven for 15-20 minutes.
Recipe based on a 2lb Pork Butt Roast
My BBQ sauce:
3 cups of water
1/3 cup of white vinegar
1/3 cup brown sugar
1/2 cup tomato paste
1 1/2 tbs. molasses
3 teaspoons of liquid smoke (Hickory)
1 1/4 tsp. onion powder
1 tsp. garlic powder
1 1/2 tsp. salt
1/4 tsp celery seed
1 tsp. of caramel color
