Vegan Risotto with Honeynut Squash
Made with 6 simple ingredients, this vegan squash risotto is a creamy and filling dinner idea.
Ingredients
1 honeynut squash
Sunflower oil
1 cup of arborio rice
2 cups of vegetable broth
1 cup of hemp milk
1 tsp of sage
Directions
1. Preheat oven to 400 F.
2. Skin, deseed, and slice honeynut squash into small wedges.
3. Add squash to a baking sheet and drizzle with sunflower oil. Mix well.
4. Bake for 40 minutes, tossing after 20 minutes.
5. While squash is roasting, rinse arborio rice and add to a pot. Pour in vegetable broth.
6. Boil arborio rice for approximately 20 minutes, or until all excess liquid is gone.
7. Once squash is cooled, add to a blender. Add in hemp milk and sage. Blend until smooth.
8. Add squash to risotto and mix well. Serve and enjoy!

White Bean Soup Recipe
Perfect for a cold night, these white bean soup is a hearty vegan soup, packed with veggies.
Ingredients
3 cloves of garlic
3 shallots
4 carrots
8 cups of vegetable broth
28 oz of canned white beans
1 cup of kale
1 tsp of garlic powder
1 tsp of onion powder
1 tsp of turmeric
1 tbsp of oregano
8 oz of diced tomatoes
Directions
1. Mince garlic and slice shallots and peeled carrots. Roughly chop kale and set aside.
2. Add garlic, shallots, and carrots to a large pot. Pour in vegetable broth.
3. Bring pot to a boil and cook vegetables for 15 minutes.
4. Add in rinsed white beans, diced tomatoes and kale. Sprinkle in garlic powder, onion powder, turmeric and oregano.
5. Mix well.
6. Reduce to low heat and let simmer for 10 minutes.
7. Remove from heat and let cool. Serve and enjoy!

Ingredients
1/2 cup of oat flour
1/2 cup of rolled oats

Ingredients
1 and 1/2 cups of arborio rice
4 cups of vegetable broth
2 cloves of garlic
3 shallots
20 oz of mushrooms
Fresh rosemary for garnish
Directions
1. Preheat oven to 400F.
2. Mince garlic and slice shallots and mushrooms. Set aside.
3. Rinse arborio rice and add to a large casserole dish. Add in vegetable broth, garlic, shallots and mushrooms. Mix well.
4. Cove and bake for 30 minutes. After 30 minutes, uncover and bake for an additional 30 minutes.

1/4 tsp of baking soda

Directions
1. Preheat oven to 350F.
2. Add all purpose flour, monkfruit sweetener, baking soda, and almond milk to a bowl. Mix well.

Coconut Chickpea Curry | Easy Vegan Dinner Idea
Creamy with hints of spice, this coconut chickpea curry recipe is an easy and flavorful vegan dinner idea
Ingredients
1 cup of wild rice
1 cup of dried chickpeas
3 cloves of garlic
2 shallots
2 small peppers
1 green chili
1 and 1/2 cups of lite coconut milk
1 tsp of onion powder
1 tsp of garlic powder
1/2 tsp of turmeric
1/2 tsp of chili powder
1 tsp of red curry paste
Directions
1. Add wild rice to a medium sized pot and cover with water. Bring to a boil and cook for approximately 20 minutes, or until no excess water remains. Set aside.
2. Rinse dried chickpeas and add to a small pot. Cover with water and bring to a boil. Boil for 10 minutes and remove from heat and let sit for an additional 10 minutes. Strain and let cool.
3. Mince garlic and slice shallots and peppers. Add to a large frying pan and saute for 10 minutes.
4. Add coconut milk, onion powder, garlic powder, turmeric, chili powder and red curry paste to frying pan. Mix well.
5. Add in rice and mix well. Let sit for 10 minutes.
6. When ready to serve, portion into bowl and top with chickpeas. Serve and enjoy!

1 butternut squash
Sunflower oil
1 tsp of rosemary
1 tsp of thyme

1/2 cup of hemp milk
1 tsp of maple syrup
Walnut pieces for garnish
Directions

4. While squash is cooking, add 1 cup of rinsed quinoa to a small pot. Cover with water and bring to a boil. Cook for approximately 15 minutes, or until all excess water is evaporated.
5. Add quinoa to a bowl. Mix in pecans, brown sugar stevia, and sage leaves.
6. Remove squash from oven and carefully uncover. Portion quinoa mixture evenly on top of squash.
7. Bake for an additional 20 minutes uncovered.
8. Remove from oven and let cool. Garnish with extra sage leaves. Serve and enjoy!

Sweet and creamy, this banana peanut butter overnight oats recipe is a simple to make vegan breakfast idea.
Ingredients
1/2 cup of rolled oats
1/2 cup of unsweetened vanilla almond milk
1 tbsp of peanut butter
1 banana
Optional
1 tsp of chia seeds
Directions
1. Add rolled oats, almond milk and peanut butter to a bowl. Mix well.
