GoPro Action Camera Head Strap Hacks
If you are a #contentcreator, especially one doing #hunting or #fishing or #trapping or other #outdoors content, you're well aware of the need for an #actioncamera such as #gopro. Many times, when you but a cheap action camera, they'll come with various accessories. Other times, you may need items for your GoPro and affordable accessories can be found on #amazon or #temu or elsewhere. Most importantly are the "chestie" (chest mount) and head strap commonly used by GoPro-style action cameras.
The chestie, while more comfortable, generally is not preferred by viewers. The head strap is aggravating and uncomfortable, but the footage you can get from it is generally preferred by viewers. With both of these types of straps/mounts, the cheaper versions come with a flaw that causes them to become unusable after a period of time.
In this video, Ken will show you two GoPro action camera head strap hacks that will increase the life of the product while also making sure your valuable action camera doesn't get lost while out on the water. One of these tips comes from @godscountryhuntingfishing1638 (on YouTube) which Ken erroneously referred to as God's Country Outdoors (a different YouTube channel). Ken meant to say the God's Country Hunting & Fishing YouTube channel.

Southern-Styled Bread Pudding
In this video, Ken finds a deal while shopping at @walmart. So, he decided to make a #dessert. More specifically, Ken decided to make a #Southern styled #breadpudding.
A Southern-styled bread pudding differs from a Northern-styled #breadpuddingrecipe in technique and texture. Also, a Southern-styled bread pudding may or may not have a sauce while the Northern version typically does not.

Ken's Southern-Style Bread Pudding
1 loaf of bread, diced (approximately 8 cups)
1 c. sugar
3 eggs
3 c. whole milk
1/2 tbsp. vanilla extract
1 c. raisins
1 pinch salt
1 c. self-rising flour
2 tbsp. salted butter
Preheat an oven to 350°F. In a large bowl, mix together the sugar, eggs, milk, vanilla, and salt. Mix in the raisins and the bread. Let the bread soak a few minutes until the bread is soggy and falling apart when stirred. Add in the flour and stir well until most, if not all, of the bread is no longer distinguishable and you have a thick batter-like mass. Grease a casserole dish with butter and pour in the batter. Bake for 30-50 minutes or until the bottom is brown and a toothpick, when inserted in the middle, comes out clean. Let cool for 15-20 minutes before cutting into bars. (TIPS & SUGGESTIONS: Ken used a 3 quart casserole dish, which produces a thinner bread pudding. For a thicker bread pudding, pour into a high sided 8"x8" or 9"x9" dish. You may need to add additional time for cooking a thicker bread pudding. Ken did not do a sauce for this bread pudding. Some people make either a bourbon sauce or a lemon sauce for bread puddings. If doing a sauce, cut the sugar to 2/3 cup. Bourbon sauce is typical for bread pudding with raisins. Lemon sauce started being used after Prohabition and is still popular with many Evangelical Christians. Bread pudding with fresh huckleberries or blueberries generally taste better with a lemon sauce. If using fresh berries, freeze them and add the frozen berries at the last minute so they do not have time to thaw and discolor the pudding before being placed into the oven. This bread pudding will rise in the oven and then fall when cooling, so don't be alarmed when you notice a marked deflation as this pudding should be dense and cuttable.)

An Unplanned Spring Kayak Fishing Trip With The Wife
Sometimes, you just have to make the wife happy. This was the case with Ken a few days ago. The weather had forecasted rain all Saturday long. Therefore, the wife let him sleep-in. Just before noon, he woke up and she decided she wanted to go out on the #kayak in less than two hours. She also suggested he film. Naturally, being a #YouTuber, it generally takes over five hours to assemble all his video and #fishing equipment. Not knowing the tide, wind, weather, etc. Ken quickly assembled what he could and they were off! Then, once he got there, as Ken was set to go #kayakfishing, his wife took one of his rods! Again, this was atypical. And, to be truthful, "atypical" was the word of the day in this video.
So, come and ride along as Ken tries to recover a day doing a totally unplanned Spring kayak fishing trip with his wife!

Making Citrus Cracker Ice Box Desserts | Key Lime & Orange Flavors
In this video, Ken decides to #experiment with a Columbian #recipe for an #icebox #dessert made with #lime and #crackers. As he explains, finding the Ducales brand crackers in his local Hispanic foods store was pointless. So, he decided to do like most Americans and totally rewrite the dessert to fit our tastes.
The original recipe is:
2 (14 oz) cans of Sweetened Condensed Milk
1 pint Heavy (Whipping) Cream
1/2 cup Lime Juice (about 8 limes)
1 tablespoon of Lime Zest
10 ounces Ducales Crackers
In a bowl, mix together the dairy products. Pour in the lime juice and mix (mixture will get very thick, very fast). In a small to medium dish, spread a thin dollop of the dairy mixture on bottom. Place crackers on top and cover with a thin layer of dairy mixture. Keep layering (like a lasagna) until you are out of crackers and then place remaining dairy mixture on top. Evenly sprinkle the zest on top. Cover and let sit a minimum of 2 hours but overnight is preferred.
Naturally, since Ducales is hard to find in the United States, many people use #ritzcrackers instead. However, because of the shape and thickness, many complain the Ritz crackers are too thick and the shape is not suited for this #dessert. So, Ken decided to use #keylime juice and #grahamcrackers to mimic the taste of #keylimepie. He then purchased buttery club crackers as a replacement of the Ducales to mimic a traditional #Florida #orange #pie. However, the orange juice did not have enough acid. If using a low-acid citrus juice, like orange, consider adding about 1/2 to 1 teaspoon of cream of tartar. It is a relatively cheap acid powder used in baking and derived from grapes. Since the orange flavor was so muted, Ken suggests adding twice the amount of zest into the dairy mixture. At the end, Ken glacéd the fruit. Glacé is just a fancy term to mean "candy" or "glazed." With the limes, the pith was so bitter, Ken recommended boiling the thin slices for a few minutes, pouring off the water, shocking them in an ice bath, and patting them dry before commencing the candying process. The naval orange peels do not need this done. The peels on top really gave the orange desser the punch it needed!
Naturally, this was for an #Easter event at Ken's church. However, this dessert can be made practically anytime of the year and is well received.

How I Concassé Tomatoes and Make My Tomato and Zucchini Casserole
In this video, Ken shows how he concassés #tomatoes. The term "concassé" is a French term meaning roughly "to crush" as in making a sauce. In America, the term is used culinarily to mean any of the steps used in the French process. Thus, it can refer to (1) the process used to peel produce in this French process (2) the process of peeling, deseeding, and rough chopping produce or (3) the process of peeling, deseeding, rough chopping, and grinding produce. For this video, Ken is referring primarily to the first definition as he does not deseed the tomatoes. Later, Ken shows how to use what you have on hand, as he does a second #cooking element to this #cookingvideo, by making a #tomato and #zuchinni #casserolerecipe.

Ken's Tomato & Zucchini Casserole
3 lg. Tomatoes, Peeled & Chopped
6 Zucchini, Chopped
1 med. Yellow (Spanish) Onion, Peeled & Chopped
~ 6 c. Stale French Bread, Cubed
6 tbsp. Salted Butter
2 tbsp. Cooking Oil
4 tbsp. Extra Virgin Olive Oil
1 tbsp. Toasted Sesame Seed Oil
@McCormickVideos Peppercorn Grinder, to Taste
Sea Salt, to Taste
~1/2 tsp. Monosodium Glutamate (MSG), to Taste
1/2 to 1 tsp. Paprika, Optional (Hungarian Sweet Paprika Preferred)
Garlic Salt, to Taste
Place 2 tbsp. butter and 2 tbsp. cooking oil in a large pot and melt together on medium-high heat. Add in the tomatoes and cook until they start to break down. Add in the onions and cook until the onions turn translucent. Season with peppercorn medley, salt, MSG, and paprika. Add in the zucchini and cook until they are tender and cooked through. Taste and adjust for seasoning. In the microwave, melt the remaining butter. After the butter is melted, add the sesame oil and olive oil. In a bowl or on a sheet tray, place the bread and drizzle the oil blend over the bread and toss well to make sure every piece is thoroughly coated. Season the bread well with garlic salt, tossing to insure the bread is well coated. Preheat an oven to 350°F (177°C). Butter a casserole dish (in the video, Ken used a 3 quart casserole dish but you can use a smaller one if you want more veggies to bread. If you use a smaller casserole dish, you will need to cut back on seasoned bread cubes used.). Bake the casserole for 20-30 minutes or until the bread is uniformly toasted. Remove from the oven and let sit 10 minutes before serving.

Amish Friendship Bread {This Recipe Is Weird!!!}
In this video, Ken had a friend offer him a starter and recipe for what claimed to be the "original" Amish Friendship Bread. Being a child of the '80s, Ken accepted and tried to recreate a memory from his childhood when this #recipe was most popular. However, he soon found out that what he remembered differed greatly from this #breadrecipe. Nothing about it made sense! It was just #weird and nothing about it seemed genuinely #Amish.

While this recipe is weird, it is also a very tasty dessert-type bread. It is wonderful with coffee or a cold glass of milk. It also can be modified into a whole host of options. The Friendship Bread Kitchen even has additional recipes for cookies and more, so give them a look.
Since this #bread is so #strange, Ken has the following suggestions:
1) If using the starter, as the recipe calls for, you'll want to:
a) Keep the starter in a warm, dark location
b) Make sure the starter is active before using (it should be bubbly)
c) De-gas the bag often since sourdough produces a lot of gas
d) Once in loaf pans, let the bread rise until it is doubled before baking
2) If you wish to forego the whole starter process, Ken suggests:
a) Add an additional 1/3 cup each of flour, milk, and sugar to end recipe
b) Consider using self-rising flour for more lift
3) For general baking of the bread, Ken suggests:
a) Double the amount of optional nuts/raisins called for in the recipe
b) Use two boxes of the instant pudding for moisture and softness
c) Use metal 9"x5" loaf pans if possible (glass doesn't do well for baking)
d) Consider adding a finely diced or grated, peeled apple
e) Consider other dried or fresh fruits beside raisins
f) Consider substituting half the sugar in the recipe for brown sugar
g) Consider substituting half the oil with a stick of room temp butter
h) So much of the flavor is based on spices and pudding, so play with flavors

I Inherited a Smoker. Learning the Smoker by Smoking a Boston Butt {Pressed Cubans Afterwards}
As Ken notes in the video, he lost his father around Christmas of 2018. One of the personal items Ken received at his father's passing was a smoker. In this video, Ken tries to learn this smoker by smoking a Boston butt (pork shoulder) using an invasive tree wood called Chinese Tallow Tree (aka Popcorn Tree). Late February Fishing Trip {Catch Clean and Cook}
In this video, Ken goes out on a late February #fishingtrip with his good friend, Ricky, from @wallaceknifeworkshomestead . This is very much a typical winter time #fishing setup you'll commonly see in Northwest #Florida where the boys were targeting #largemouth #bass, #stripedbass, #redfish, #catfish, and other species.
For Ken's setup, he was mostly using a Cadence Ideal 4000 Series Spinning Reel (made by @CadenceFishing ) on a 7 ft. medium heavy Condor graphite rod with approximately 75 feet of 20# monofilament line tied to 30# braid (8# diameter). Ken used a modified Carolina Rig he calls his "Fish Finder Rig." He used a 00 Demon circle hook with a shank knot. Dead shrimp was his preferred bait.
After the trip, Ken did a #catchcleanandcook using a grill he inherited from his father.

It's easy to get a wrong impression about something watching videos. Television and YouTube makes #fishing appear to be so simple. You just cast out a line and a fish magically appears on the end with every cast. Obviously, this isn't the case. However, no one wants to watch a video where the angler catches nothing for days in a row. That's not entertaining!

KEN'S APPLE, BEET, & ONION CHUTNEY
1 medium Granny Smith Apple (Peeled, Cored, and Finely Diced)
1 medium Golden Beet (Peeled and Finely Diced)
2 medium Spanish Onions (Peeled and Finely Diced)
1 tbsp. Rice Wine Vinegar
1 tsp. Sea Salt
1 tsp. Tajin
2 tbsp. Salted Butter
1 tbsp. Sugar
1 1/4 c. Water
1 tbsp. Turmeric Powder
1/2 to 1 1/2 tbsp. Dark Brown Sugar, to Taste
The trick to this dish is to make sure all of your produce is approximately the same size. You want them to be just a little smaller than a tennis ball or baseball in size but no smaller than a cue ball (used for playing pool). In a medium-sized cooking pot, add in the beets along with the vinegar, salt, tajin, butter, turmeric, and a cup of the water. If you do not wish to use white sugar, you can replace the water with apple juice. If you do not have turmeric, you can substitute a teaspoon of dried ginger and a couple of drops of yellow food coloring. Place pot on the stovetop and bring to a light boil over medium heat. Let the beets boil for approximately seven minutes. Next, add in the apples and cook for another seven minutes. Seven minutes later, add in the onions. Cook everything until you start to see browning. Here, it is a judgment call. you want some level of browning to get those wonderful flavors from the Maillard Reaction but you also want to keep some of that wonderful yellow color. The idea is to shoot for a golden color when the water is added. A good rule of thumb is to take the chutney to about 25%-33% browning...nothing like caramelized onions. Next, add your remaining 1/4 cup of water and stir. The apples will be almost totally gone and the vegetables will almost form a paste-like consistency. At this point, turn off the heat and remove the pot from the stove. Add in the brown sugar to taste. If you like less sweet, more tart, chutneys then add in a half tablespoon. This is where personal preference will matter most. A good rule of thumb is about a tablespoon of brown sugar. Place the chutney in a bowl and let chill in a refrigerator for no less than an hour (overnight is preferred).
KEN'S ROASTED POTATOES
3 lb. Irish Potatoes, Quartered or Halved into 1-1 1/2 Inch Chunks
1 tbsp. Yellow Mustard
1/3 c. Sour Cream
1 tbsp. Dry Ranch Dressing Seasoning
1/3 c. Cooking Oil
1 tbsp. Sea Salt
Place all of the ingredients into a gallon zip top bag and mix. Instead of salt, you can add a cup of grated parmesan cheese. Once mixed, add in the potatoes (with peels) and mix in the bag until coated. Place on a sheet tray lined with either aluminim foil or parchment paper. Place into a 425°F (220°F) oven for approximately 20-25 minutes until the potatoes are cooked through and a toothpick can easily be inserted through. If not to your desired level of brownness, you can place them under the broiler for a few additional minutes. Serve hot.
KEN'S FIRE CRACKER FISH CRUST TOPPING
1/2 c. Fire Crackers, Crumbled into a Bread Crumb Consistency
1 1/2 c. Unseasoned Panko Bread Crumbs
1 c. Parmesan Cheese
1 tbsp. Worcestershire Sauce
1/2 Lime, Juice and Zest
1/2 stick Salted Butter, Melted
1 tbsp. Sea Salt
If you have not see the fire cracker recipe, go there first and make the fire crackers (video is here: https://youtu.be/YQUDohG8HcA). Remember, heat will make the peppers in the fire crackers get hotter, so use less red pepper flakes if you don't like really spicy foods. In a gallon zip top bag, mix everything together. Season fish with salt and pepper. Place fish fillets on an aluminum foil or parchment paper lined sheet tray and bake for 20-25 minutes at 425°F (220°F). This recipe should do about three pounds of fish fillets.

1 lb. Saltine Crackers
2 tbsp. or 1/4 c. Toasted Sesame Seed Oil
2 tbsp. or 1/4 c. or 1 pkt. Dry Ranch Dressing Powder
2 - 4 tbsp. Crushed Red Pepper Flakes
1/2 tsp. Granulated Garlic
3/4 c. Extra Virgin Olive Oil
1 tbsp. Tajin (Optional)
For this recipe, Ken suggests you use a good quality saltine cracker that doesn't break easily. He used @WalmartCorporate #GreatValue brand crackers and they broke too easily. Consider @Nabisco or another proven name brand. In either a large sealable container, or a 2-gallon zip-top bag, mix together the oils, ranch dressing powder, pepper flakes, granulated garlic, and optional Tajin. A packet of ranch dressing powder is approximately 2 tablespoons by volume. Place in the crackers, close the container/bag, and gently shake to cover. Every 5 to 10 minutes gently shake to make sure the crackers are fully covered. The crackers are ready in 20 minutes but are best after waiting an hour. For this video, Ken used extra pepper and did not use Tajin. He suggests using less pepper, and not adding Tajin, for your first batch and then adding pepper and Tajin as you dial in the crackers to your own personal tastes. These go great with seafood and hearty soups and stews.

French Onion Soup Done My Way

In this video, Ken shows you how to make French onion soup his way. It takes cues from #NewOrleans style cuisine with Ken's own touches here and there. Jokingly, he called it #FloridaMan French Onion Soup.

KEN'S FRENCH ONION SOUP
3 lbs. Onions (Peeled, Halved, and Thinly Sliced)
1/4 c. Fat (Butter, Olive Oil, Chicken Fat, Duck Fat, or Goose Fat Preferred)
2 c. Dry White Wine
1 - 3 tbsp. #Absinthe
6 c. Chicken or Beef Stock
1 Bay Leaf
1 - 1 1/2 tsp. Herbes de Provence
1 - 1 1/2 tsp. @McCormickVideos Peppercorn Medley Grinder
1 - 1 1/2 tsp. Sea Salt
1 tsp. MSG (Optional)
1/2 - 2 tbsp. Cornstarch or Flour (Optional)
2 tbsp. Cold Butter, Thinly Sliced
Bread for Croutons, As Desired
Gouda or Swiss Cheese, As Desired
In a heavy pot, cook the onions down in the fat. For this recipe, Ken used yellow, or Spanish, onions as they are traditional. However, red onions will have more depth of flavor. Ken notes you can mix the onions with the oil and cook them in the microwave to speed up the process. (Note: If you wish to caramelize the onions in the microwave, add a pinch of baking soda and stir every five minutes until the doneness you desire). When cooking the onions on a stove top, you will need to constantly stir them so they will not burn. The onion will be done when they are a chestnut color. If you like a thicker soup, you can add up to 2 tablespoons of flour to the onions right before they brown. Add in the wine to deglaze the pan. When brought back to a boil, add in the absinthe (if using sambuca or other anise-forward spirit, Ken recommends adding in 2 - 3 tablespoons of dry vermouth or 1 tablespoon of bitters) along with two cups of broth (Ken prefers chicken so as to not overwhelm the onion flavor), the bay leaf, the herbes de Provence, pepper, and salt. After about 5 to 7 minutes, add in another two cups of stock. Let this cook for another 5 to 7 minutes before adding in the last addition of the stock with the optional MSG. If you did not add flour into the soup beforehand, and you want the soup to be thicker, you can make a slurry using cornstarch and water. Be sure to slowly add the slurry as it thickens fast. If not thickening with flour or cornstarch, Ken used cold butter at the end to thicken his soup in the traditional French style of cooking. For this recipe, Ken did not bake the soup in an oven safe container. Instead, he made croutons with sourdough, placed gouda cheese over the soup, placed croutons on top of the cheese raft, topped with more cheese, and then torched the cheese on top before serving. This did can totally be made in a microwave; however it may lack the depth of flavor this stovetop version has.

A Bad Egg? How To Test The Freshness Of An Egg Using The Water Float Test
If you are a regular viewer of the channel, you will know that Ken is used to farm life. Not only has he raised livestock in the past, but his in-laws have a farm where they raise sheep, chickens, etc. In fact, in many of his cooking videos, Ken will often talk about he eggs he uses coming from his in-laws' farm. Recently, Ken and his wife were gifted some older eggs. As Ken tells it, he told his wife, "Not many people probably know how to test an egg for freshness." To that, his wife replied, "Then make a video about it!" So, that is what this video is all about!
While there are many ways to check the freshness of an egg, the easiest may be the water test. Naturally, most home tests for freshness rarely actually tell if an egg is "bad" or not. Instead, they usually can only tell if the egg is older or not. As Ken notes, even a "not fresh" egg is most likely still edible. The French used to be fond of old eggs for various culinary applications. Still, in our culture, we embrace a "fresh is best" approach whether it is or isn't. This is quite possibly due to the fact our automated approaches to feeding the masses often means meats, dairy, eggs, and produce are infected with diseases private farms may not deal with. Moreover, our government makes mandatory guidelines for food producers which may or may not serve the public any benefit. For example, the "best by" date is an USDA mandate where egg manufacturers must put an arbitrary date on the egg carton that is approximately 30 days after the egg was processed. It says nothing as to whether the egg is "bad" or not and it surely says nothing about the bacteria and diseases the egg may carry.
Either way, whether you are new to raising chickens and eating farm fresh eggs, or if you just happen to have some old eggs that are a little "iffy;" be sure to watch this video so you can learn how to tell if an egg is fresh or not.

How I Make Sourdough Bread
Nothing is quite as good as #homemade #bread. Probably the oldest known form of bread is #sourdough bread. In this video, Ken shows how he makes sourdough bread.
For Ken's #sourdoughstarter, he used a combination of whole milk with all-purpose flour. As he notes, this starter was originally made back around 2018. To make it, Ken mixed sour cream (with active bacterial cultures) with flour and left it in a container on a heating pad. According to Ken, since sourdough is a combination of yeast and bacteria, adding the milk into your starter gives you a better result.

Ken's Sourdough Bread:
1/2 c. Sourdough Starter
1 1/2 c. Whole Milk
1 TBSP Cooking Oil
2 3/4 to 3 c. Unbleached Enriched Bread Flour
1 TSP Sea Salt
(NOTE: For best results, consider using a quality stand mixer with a dough hook attachment when mixing). Mix the sourdough starter with milk, cooking oil, salt, and 2 1/4 cups of flour. You'll want to mix for several minutes until the dough has the consistency of wet concrete that's setting up and you can feel a resistance where the protein structures are forming. Place plastic over the bowl and allow to sit in a dark, warm location until the dough is about doubled in size. Add another half cup of flour to the dough and knead for a minimum of fifteen minutes. Because this is a high hydration dough, it will not make a pane-like effect usually. When properly kneaded, the dough will form a ball but start to sag when laid down, and it will pull away from the hands or utensils with minimal effort. Line a Dutch oven with partchment paper, form the dough into a ball, dust the dough ball with about 1/8 of flour, and place the dough ball into the Dutch oven. For a higher loaf, use a Dutch Oven less than seven quarts in size. Lid the Dutch oven, place it in a warm location, and wait until the dough doubles in size. Lightly punch down the dough, using a picking and poking motion with one's fingers, to give the bread's crumb a more artisenal look. Relid the Dutch oven and let it double again in size. Preheat an oven to 450°F. Using either a bread lame, razor blade, or serrated knive; cut a vent line about a quarter of an inch in depth across the top of the loaf. Make sure to cut at an angle. Place the lidded pot into the oven and bake for 20 minutes. When done, remove the lid, place back in the oven, reduce the head to 400°F, and bake another 15 minutes. Remove the bread from the Dutch oven onto a plate, or preferreably a cooling rack, and allow to cool completely before slicing.

First Time Catching Speckled Perch {Crappie Catch and Cook}
#Florida is not known for its #crappiefishing opportunities. In fact, Ken will be 47 in a few days and has never caught a #crappie while #fishing. That's how rare they are in this state! So, when a local state lake, known for its #speckledperch, was being drawn down for weed control; Ken decided to grab his @PelicanSportVideos Catch Classic 100 #kayak and go #kayakfishing with his good friend, and #Christian #tiktoker, Josh Zajac. Armed with an #oldtown Predator PDL 14 ft kayak, Josh and Ken braved howling winds and unusually cold temperatures to fight weeds in hunt of the rate and elusive Florida crappie.

KEN'S BAKED BEANS
4 strips thick-sliced bacon or hog jowl, cut into lardons
1 small Spanish onion, diced
1/4 green bell pepper, diced
1 can pork & beans
1/4 c. brown sugar, pressed firmly
1/2 tbsp. dried minced onions
1/2 tbsp yellow mustard
4 tbsp. barbeque sauce
black pepper, to taste
Fry out the lardons until golden brown. Remove the meat and leave a tablespoon or two of the rendered fat in the pot and sautee the onions. When translucent, add in the peppers and sauté until tender. Then toss in the pork and beans, brown sugar, minced onions, mustard, barbeque sauce, and black pepper. Cook for about three minutes until nice and bubbly. Pour into a small casserole dish (either 8x8 inch or 9x9 inch will work) and place into a preheated 375*F oven for 25 minutes.

Blueberry Pecan Cream Cheese Pie
Who doesn't love #pie!?!
In this video, Ken does what he calls his "camp pie." He calls the pie this because it was commonly made at the hunting camp. This is a #fruit, #pecan, and #creamcheese #pierecipe. In this video, he just happened to use #blueberry pie filling. However, you can use #strawberries, #cherries, or whatever fruit you like. If you have a nut allergy, you can easily substitute the pecans with buttered #pretzel pieces.
KEN'S CAMP PIE
9" Frozen Premade Deep Dish Pie Crust
6 oz. (170 g.) Pecan Halves, Chopped (5-8 Halves Reserved)
8 oz. (226 g.) Cream Cheese, Room Temperature
1 c. (130 g.) Confectioners Powdered Sugar
21 oz. (595 g.) Fruit Pie Filling (1 Dollop Reserved)
16 oz. (453 g.) Whipped Topping (As Needed)
Preheat your oven to 405°F (207°C). If your oven cooks cooler or hotter, adjust accordingly. Let pie crust defrost for 10-15 minutes. Dock the pie crust using a fork along the bottom and sides. Chop the pecans into pieces, fill the pie crust with the pecans, level, and place in the oven to bake for 15 minutes. (NOTE: If you are trying to save money, or worried about nut allergies, you can substitute the pecans with about 1 1/2 cups of busted snack pretzel pieces coated with 3-4 tablespoons of salted butter.) While the pecans (or pretzel pieces) are baking, mix the cream cheese and confectioners sugar together in a bowl. When the pie shell is baked, take a look. Ken usually likes to put the shell and nuts under a broiler for a few seconds to get a nice golden brown. When done, quickly remove the hot pie shell onto a cooling surface and place dollops of the cream cheese mixture on top. Lightly, and quickly level out the cream cheese mixture. Place dollops of the fruit pie filling over the cream cheese filling and level out. Lastly, using a large knife or spatula, place dollops of whipped topping along the sides and level out across the top. Decorate with reserved nuts and topping (or fresh fruit). Place in a covered container and let sit in a refrigerator for a minimum of two hours (overnight is preferred). Blueberry and strawberry or cherry pies make a perfect #independenceday #dessert combo to bring to any #party. As Ken says, "If you make this, you're going to be popular!"

During #AmazonPrimeDay, Ken saw a deal for a #HAFGYKIO #actioncamera . . . which he ordered. In his deep sea fishing video, Ken explained how his wife also bought him a #goprohero10 as a surprise! If this HAFGYKIO camera works, it'll be the perfect addition for Ken to use in his #outdoor filming. However, before that, the camera must be put through its paces as it is tested out.
