A pig roast or hog roast is an event or gathering which involves the barbecuing of a whole pig.
Pig roasts, under a variety of names, are a common traditional celebration event in many places including the Philippines, Puerto Rico and Cuba.[1][2] It is also popular in the United States, especially in the state of Hawaii (a luau)[3] and in the Southern United States
The wild boar (Sus scrofa), also known as the wild swine,[3] common wild pig,[4] Eurasian wild pig,[5] or simply wild pig,[6] is a suid native to much of Eurasia and North Africa, and has been introduced to the Americas and Oceania. The species is now one of the widest-ranging mammals in the world, as well as the most widespread suiform.[4] It has been assessed as least concern on the IUCN Red List due to its wide range, high numbers, and adaptability to a diversity of habitats.[1] It has become an invasive species in part of its introduced range. Wild boars probably originated in Southeast Asia during the Early Pleistocene[7] and outcompeted other suid species as they spread throughout the Old World.[8]
As of 2005, up to 16 subspecies are recognized, which are divided into four regional groupings based on skull height and lacrimal bone length.[2] The species lives in matriarchal societies consisting of interrelated females and their young (both male and female). Fully grown males are usually solitary outside the breeding season.[9] The wolf is the wild boar's main predator in most of its natural range except in the Far East and the Lesser Sunda Islands, where it is replaced by the tiger and Komodo dragon respectively.[10][11] The wild boar has a long history of association with humans, having been the ancestor of most domestic pig breeds and a big-game animal for millennia. Boars have also re-hybridized in recent decades with feral pigs; these boar–pig hybrids have become a serious pest wild animal in the Americas and Australia.

The annual Thanksgiving holiday tradition in the United States is documented for the first time in 1619, in what is now called the Commonwealth of Virginia. Thirty-eight English settlers aboard the ship Margaret arrived by way of the James River at Berkeley Hundred in Charles City County, Virginia on December 4, 1619. The landing was immediately followed by a religious celebration, specifically dictated by the group's charter from the London Company. The charter declared, "that the day of our ships arrival at the place assigned for plantation in the land of Virginia shall be yearly and perpetually kept holy as a day of thanksgiving to Almighty God." Since the mid 20th century, the original celebration has been commemorated there annually at present-day Berkeley Plantation, ancestral home of the Harrison family of Virginia.
The more familiar Thanksgiving precedent is traced to the Pilgrims and Puritans who emigrated from England in the 1620s and 1630s. They brought their previous tradition of Days of Fasting and Days of Thanksgiving with them to New England. The 1621 Plymouth, Massachusetts thanksgiving was prompted by a good harvest. The Pilgrims celebrated this with the Wampanoags, a tribe of Native Americans who, along with the last surviving Patuxet, had helped them get through the previous winter by giving them food in that time of scarcity, in exchange for an alliance and protection against the rival Narragansett tribe.
Several days of Thanksgiving were held in early New England history that have been identified as the "First Thanksgiving", including Pilgrim holidays in Plymouth in 1621 and 1623, and a Puritan holiday in Boston in 1631. According to historian Jeremy Bangs, director of the Leiden American Pilgrim Museum, the Pilgrims may have been influenced by watching the annual services of Thanksgiving for the relief of the siege of Leiden in 1574, while they were staying in Leiden. Now called 3 Oktoberfeest, Leiden's autumn thanksgiving celebration in 1617 was the occasion for sectarian disturbance that appears to have accelerated the pilgrims' plans to emigrate to America.

Sukiyaki (鋤焼, or more commonly すき焼き; [sɯ̥kijaki]) is a Japanese dish that is prepared and served in the nabemono (Japanese hot pot) style.
It consists of meat (usually thinly sliced beef) which is slowly cooked or simmered at the table, alongside vegetables and other ingredients, in a shallow iron pot in a mixture of soy sauce, sugar, and mirin. The ingredients are usually dipped in a small bowl of raw, beaten eggs after being cooked in the pot, and then eaten.
Generally sukiyaki is a winter dish and it is commonly found at bōnenkai, Japanese year-end parties.
Sukiyaki is a one-pot dish (nabemono) that was developed during the Meiji era. Different regions have different ways of preparing sukiyaki. There are two main styles, the Kanto style from eastern Japan and Kansai style from western Japan.
In the Kanto style, warishita (a mixture of sake, soy sauce, sugar, mirin and dashi) is poured and heated in a pot, then meat, vegetables and other ingredients are added and simmered together. In Kansai-style sukiyaki, meat is heated in the pot first. When the meat is almost cooked, sugar, sake and soy sauce are added, then vegetables and other ingredients are added last.
The vegetables and meat used are different between the two styles. Because beef was expensive in the past, the use of pork was common in northern and eastern regions. Other ingredients added to modern sukiyaki include chicken (tori-suki), fish (uo-suki or oki-suki), udon noodles (udon-suki), negi, shiitake mushrooms, shirataki and slightly grilled tofu. In both styles, raw eggs are used as a dipping sauce and steamed rice with black sesame seeds is served.
There are various traditions about sukiyaki. Some concern the name. A theory about the origin of the name is from the word suki (鋤), which means spade, and yaki (焼き) which is the verb to grill. During the Edo period (1603–1868), farmers used suki to cook things like fish and tofu. However, sukiyaki became a traditional Japanese dish during the Meiji era (1868–1912). Another theory is that the name comes from the word sukimi (剥き身), which means "thinly sliced meat".
Another tradition concerns the history of sukiyaki. Buddhism was introduced to Japan during the Asuka period. At that time, killing animals was against Buddhist law. Also eating beef was prohibited since cattle were considered work animals. However, people could eat meat under some special circumstances such as when they were sick or at special events like bōnenkai, the year-end drinking party. During the Edo period eating game such as boar and duck was common and not forbidden. In the 1860s, when Japan opened its ports to foreign merchants, foreigners who came to Japan introduced the culture of eating meat and new cooking styles. Cows, milk, meat, and eggs became widely used, and sukiyaki was a popular way to serve them.

Lobsters are a family (Nephropidae, synonym Homaridae) of marine crustaceans. They have long bodies with muscular tails, and live in crevices or burrows on the sea floor. Three of their five pairs of legs have claws, including the first pair, which are usually much larger than the others. Highly prized as seafood, lobsters are economically important, and are often one of the most profitable commodities in coastal areas they populate.
Commercially important species include two species of Homarus from the northern Atlantic Ocean, and scampi (which look more like a shrimp, or a "mini lobster")—the Northern Hemisphere genus Nephrops and the Southern Hemisphere genus Metanephrops.
Shrimp are crustaceans (a form of shellfish) with elongated bodies and a primarily swimming mode of locomotion – most commonly Caridea and Dendrobranchiata of the decapod order, although some crustaceans outside of this order are referred to as "shrimp".
Shrimp are widespread and abundant. There are thousands of species adapted to a wide range of habitats. They can be found feeding near the seafloor on most coasts and estuaries, as well as in rivers and lakes. To escape predators, some species flip off the seafloor and dive into the sediment. They usually live from one to seven years. Shrimp are often solitary, though they can form large schools during the spawning season.
They play important roles in the food chain and are an important food source for larger animals ranging from fish to whales. The muscular tails of many shrimp are edible to humans, and they are widely caught and farmed for human consumption. Commercial shrimp species support an industry worth 50 billion dollars a year, and in 2010 the total commercial production of shrimp was nearly 7 million tonnes. Shrimp farming became more prevalent during the 1980s, particularly in China, and by 2007 the harvest from shrimp farms exceeded the capture of wild shrimp. There are significant issues with excessive bycatch when shrimp are captured in the wild, and with pollution damage done to estuaries when they are used to support shrimp farming. Many shrimp species are small as the term shrimp suggests, about 2 cm (0.79 in) long, but some shrimp exceed 25 cm (9.8 in). Larger shrimp are more likely to be targeted commercially and are often referred to as prawns, particularly in the Commonwealth of Nations and former British colonies.

Vacuum packing is a method of packaging that removes air from the package prior to sealing. This method involves placing items in a plastic film package, removing air from inside and sealing the package. Shrink film is sometimes used to have a tight fit to the contents. The intent of vacuum packing is usually to remove oxygen from the container to extend the shelf life of foods and, with flexible package forms, to reduce the volume of the contents and package.
Vacuum packing reduces atmospheric oxygen, limiting the growth of aerobic bacteria or fungi, and preventing the evaporation of volatile components. It is also commonly used to store dry foods over a long period of time, such as cereals, nuts, cured meats, cheese, smoked fish, coffee, and potato chips (crisps). On a more short-term basis, vacuum packing can also be used to store fresh foods, such as vegetables, meats, and liquids, because it inhibits bacterial growth.
Vacuum packing greatly reduces the bulk of non-food items. For example, clothing and bedding can be stored in bags evacuated with a domestic vacuum cleaner or a dedicated vacuum sealer. This technique is sometimes used to compact household waste, for example where a charge is made for each full bag collected.
Vacuum packaging products, using plastic bags, canisters, bottles, or mason jars, are available for home use.
For delicate food items that might be crushed by the vacuum packing process (such as potato chips), an alternative is to replace the interior gas with nitrogen. This has the same effect of inhibiting deterioration due to the removal of oxygen.
Food storage is a way of decreasing the variability of the food supply in the face of natural, inevitable variability. It allows food to be eaten for some time (typically weeks to months) after harvest rather than solely immediately. It is both a traditional domestic skill (mainly as root cellaring) and, in the form of food logistics, an important industrial and commercial activity. Food preservation, storage, and transport, including timely delivery to consumers, are important to food security, especially for the majority of people throughout the world who rely on others to produce their food.
Significant losses of food are caused by inadequate storage conditions as well as decisions made at earlier stages of the supply chain, which predispose products to a shorter shelf life. Adequate cold storage, in particular, can be crucial to prevent quantitative and qualitative food losses.

Pico de gallo (Spanish pronunciation: [ˈpiko ðe ˈɣajo], lit. 'rooster’s beak'), also called salsa fresca ('fresh sauce'), salsa bandera ('flag sauce'), and salsa cruda ('raw sauce'), is a type of salsa commonly used in Mexican cuisine. It is traditionally made from chopped tomato, onion, and serrano peppers (jalapeños or habaneros may be used as alternatives), with salt, lime juice, and cilantro.
Pico de gallo can be used in much the same way as other Mexican liquid salsas. Because it contains less liquid, it also can be used as a main ingredient in dishes such as tacos and fajitas.
The tomato-based variety is widely known as salsa picada ('minced/chopped sauce'). In Mexico it is normally called salsa mexicana ('Mexican sauce'). Because the colours of the red tomato, white onion, and green chili and cilantro are reminiscent of the colours of the Mexican flag, it is also called salsa bandera ('flag sauce').
In many regions of Mexico the term pico de gallo describes any of a variety of salads (including fruit salads), salsa, or fillings made with tomato, tomatillo, avocado, orange, jícama, cucumber, papaya, or mild chilis. The ingredients are tossed in lime juice and optionally with either hot sauce or chamoy, then sprinkled with a salty chili powder.

Soup is a primarily liquid food, generally served warm or hot (but may be cool or cold), that is made by combining ingredients of meat or vegetables with stock, milk, or water. Hot soups are additionally characterized by boiling solid ingredients in liquids in a pot until the flavors are extracted, forming a broth. Soups are similar to stews, and in some cases there may not be a clear distinction between the two; however, soups generally have more liquid (broth) than stews.[1]
In traditional French cuisine, soups are classified into two main groups: clear soups and thick soups. The established French classifications of clear soups are bouillon and consommé. Thick soups are classified depending upon the type of thickening agent used: purées are vegetable soups thickened with starch; bisques are made from puréed shellfish or vegetables thickened with cream; cream soups may be thickened with béchamel sauce; and veloutés are thickened with eggs, butter, and cream. Other ingredients commonly used to thicken soups and broths include [2] rice, lentils, flour, and grains; many popular soups also include pumpkin, carrots, potatoes, pig's trotters and bird's nests.
Other types of soup include fruit soups, dessert soups, pulse soups like split pea, cold soups and other styles.

Some soups are served with large chunks of meat or vegetables left in the liquid, while others are served as a broth. A broth is a flavored liquid usually derived from boiling a type of meat with bone, a spice mix, or a vegetable mix for a period of time in a stock.
A potage is a category of thick soups, stews, or porridges, in some of which meat and vegetables are boiled together with water until they form a thick mush.
Bisques are heavy cream soups traditionally prepared with shellfish, but can be made with any type of seafood or other base ingredients. Cream soups are dairy based soups. Although they may be consumed on their own, or with a meal, the canned, condensed form of cream soup is sometimes used as a quick sauce in a variety of meat and pasta convenience food dishes, such as casseroles. Similar to bisques, chowders are thick soups usually containing some type of starch.

While soups are usually heated, some soups are served only cold and other soups can optionally be served cold.

Butternut squash (Cucurbita moschata), known in Australia and New Zealand as butternut pumpkin or gramma, is a type of winter squash that grows on a vine. It has a sweet, nutty taste similar to that of a pumpkin. It has tan-yellow skin and orange fleshy pulp with a compartment of seeds in the blossom end. When ripe, it turns increasingly deep orange, and becomes sweeter and richer. It is a good source of fiber, vitamin C, magnesium, and potassium; and it is a source of vitamin A.
Although botanically a fruit (specifically, a berry), butternut squash is used culinarily as a vegetable that can be roasted, sautéed, toasted, puréed for soups such as squash soup, or mashed to be used in casseroles, breads, muffins, and pies. It is part of the same squash family as ponca, waltham, pumpkin, and calabaza.
Butternut squash will store for two to three months. Some varieties will keep up to six months. They are best kept at 10 °C (50 °F) with 50 percent humidity. For the best flavor, butternut squash should be left to cure for 2 months after harvest.
Nutrition

Raw butternut squash is 86% water, 12% carbohydrates, 1% protein, and contains negligible fat (table). A 100-gram reference amount supplies 188 kilojoules (45 kilocalories) of food energy, is a rich source (20% or more of the Daily Value, DV) of vitamin A (67% DV) and vitamin C (25% DV), and contains moderate amounts of vitamin B6, vitamin E, magnesium, and manganese, each having content of 10–12% DV.
Culinary uses
One of the most common ways to prepare butternut squash is roasting. Once roasted, it can be eaten in a variety of ways. The fruit is prepared by removing the skin, stalk, and seeds, which are not usually eaten or cooked. However, the seeds are edible, either raw or roasted, and the skin is also edible and softens when roasted. The seeds can even be roasted and pressed into an oil to create butternut squash seed oil. This oil can be used for roasting, cooking, on popcorn, or as a salad dressing.
In Australia, it is regarded as a pumpkin, and is used interchangeably with other types of pumpkin.
In South Africa, butternut squash is commonly used and often prepared as a soup or grilled whole. Grilled butternut is typically seasoned with nutmeg and cinnamon or stuffed (e.g., spinach and feta) before being wrapped in foil and grilled. Grilled butternut is often served as a side dish to braais (barbecues) and the soup as a starter dish.
Butternuts were introduced commercially in New Zealand in the 1950s by brothers Arthur and David Harrison, nursery workers, and Otaki market gardeners.

Guacamole (Spanish: [(ɡ)wakaˈmole] (listen); (informally shortened to guac in the United States since the 1980s) is an avocado-based dip, spread, or salad first developed in Mexico. In addition to its use in modern Mexican cuisine, it has become part of international cuisine as a dip, condiment and salad ingredient.
Avocado seeds were first found in the Tehuacan Valley of Mexico around 9,000–10,000 years ago (7000–8000 BCE) and had been domesticated by various Mesoamerican groups by 5000 BCE. They were likely cultivated in the Supe Valley in Peru as early as 3100 BCE. In the early 1900s, avocados frequently went by the name alligator pear. In the 1697 book, A New Voyage Round the World, the first known description of a guacamole recipe (though not known by that name) was by English privateer and naturalist William Dampier, who in his visit to Central America during one of his circumnavigations, noted a native preparation made of grinding together avocados, sugar, and lime juice.
Guacamole has increased avocado sales in the U.S., especially on Super Bowl Sunday and Cinco de Mayo. The rising consumption of guacamole is most likely due to the U.S. government lifting a ban on avocado imports in the 1990s and the growth of the U.S. Latino population.
Ingredients
Guacamole is traditionally made by mashing peeled, ripe avocados and salt with a molcajete y tejolote (mortar and pestle). Recipes often call for lime juice, cilantro, onions, and jalapeños. Some non-traditional recipes may call for sour cream, tomatoes, basil, or peas.
Due to the presence of polyphenol oxidase in the cells of avocado, exposure to oxygen in the air causes an enzymatic reaction and develops melanoidin pigment, turning the sauce brown. This result is generally considered unappetizing, and there are several methods (some anecdotal) that are used to counter this effect, such as storing the guacamole in an air-tight container or wrapping tightly in plastic to limit the surface area exposed to the air.
Composition and nutrients
As the major ingredient of guacamole is raw avocado, the nutritional value of the dish derives from avocado vitamins, minerals and fats, providing dietary fibre, several B vitamins, vitamin K, vitamin E and potassium in significant content (see Daily Value percentages in nutrient table for avocado). Avocados are a source of saturated fat, monounsaturated fat and phytosterols, such as beta-sitosterol. They also contain carotenoids, such as beta-carotene, zeaxanthin and lutein.

The main user interface is organized into five sections: scenes, sources, audio mixer, transitions, and controls. Scenes are groups of sources like live and recorded video, text and audio. The mixer panel lets the user mute the audio, and adjust the volume through virtual faders, and apply effects by pressing the cogwheel next to the mute button. The control panel has options for starting/stopping a stream or recording, a button to transform OBS to a more professional Studio Mode (see below), a button for opening the settings menu and a button to exit the program. The upper section has a live video preview, used to monitor and edit the current scene. The user interface can be switched to a variety of themes, including both dark and light themes, depending on what the user prefers.
When in Studio Mode, there are two canvas preview windows, the left one for modifying and preview of non-active scenes, while the right window is for preview of the live scene ("Preview" and "Program" respectively). In the middle there is a secondary transition button, allowing for transitioning to the non-active scene in the left window using user-defined "quick transitions".

OBS Studio (formerly Open Broadcaster Software or OBS, for short) is a free, open-source, and cross-platform screencasting and streaming app. It is available for Windows, macOS, Linux distributions,[a] and BSD.[b] OBS Project raises funds on Open Collective and Patreon
OBS Studio is a free and open-source app for screencasting and live streaming. Written in C/C++ and built with Qt, OBS Studio provides real-time capture, scene composition, recording, encoding, and broadcasting via the Real Time Messaging Protocol (RTMP). It can stream videos to any RTMP-supporting destination, including YouTube, Twitch, Instagram and Facebook.
For video encoding, OBS Studio can use the x264 transcoder, Intel Quick Sync Video, Nvidia NVENC and the AMD Video Coding Engine to encode video streams into the H.264/MPEG-4 AVC or H.265/HEVC formats. It can encode multiple tracks of audio in the AAC format. More experienced users can choose any codecs and containers available in libavcodec and libavformat, or output the stream to a custom FFmpeg URL.
OBS Studio also supports plug-ins to extend its functionality.

The main user interface is organized into five sections: scenes, sources, audio mixer, transitions, and controls. Scenes are groups of sources like live and recorded video, text and audio. The mixer panel lets the user mute the audio, and adjust the volume through virtual faders, and apply effects by pressing the cogwheel next to the mute button. The control panel has options for starting/stopping a stream or recording, a button to transform OBS to a more professional Studio Mode (see below), a button for opening the settings menu and a button to exit the program. The upper section has a live video preview, used to monitor and edit the current scene. The user interface can be switched to a variety of themes, including both dark and light themes, depending on what the user prefers.
When in Studio Mode, there are two canvas preview windows, the left one for modifying and preview of non-active scenes, while the right window is for preview of the live scene ("Preview" and "Program" respectively). In the middle there is a secondary transition button, allowing for transitioning to the non-active scene in the left window using user-defined "quick transitions".
