Spicey Chicken Marinade by Cowboy Kent Rollins
Ingredients
• 1 large skinless, boneless chicken breast
• ¼ cup balsamic vinegar
• ¼ cup brown sugar
• ¼ cup avocado oil
• ¼ Cup chipotle peppers in adobo sauce
• 2 or 4 garlic cloves minced
• 2 Tablespoons creole seasoning
• 1 teaspoon ground mustard
• 2 teaspoon dried oregano
Instructions
1. Place the chicken in a plastic bag and pound with a rolling pin to tenderize and reduce the thickness slightly.
2. In a small bowl, whisk together the remaining ingredients.
3. Pour the contents into the bag with the chicken and roll around to coat. Place in the icebox for at least 4 hours.
4. Remove from the bag and grill immediately when ready.
Emeril's Creole Seasoning
• 2 1/2 tablespoons paprika
• 2 tablespoons salt
• 2 tablespoons garlic powder
• 1 tablespoon black pepper
• 1 tablespoon onion powder
• 1 tablespoon cayenne pepper
• 1 tablespoon dried leaf oregano
• 1 tablespoon dried thyme
Jeff’s Lemon Iced tea 2 quarts (64oz) size
• 3 Lemon
• Iced tea bags follow box instruction
• 1 cup of sugar
• 3 cups of water
Instruction
1. Put half the sugar in a bowl ½ cup
2. Using a vegetable peeler, peel the lemon in the lay it flat in the sugar for 3-8 hours and over with the remain sugar ½ cup
3. Bring the water to a boil and dissolve the sugar and lemon peel for 2 or 3 minutes
4. Turn off the stove and place the teabags in the water to steep for 4-5 minute
5. Fill the container ¾ way with ice
6. Squeeze the juice from the 3 peeled lemons into the container
7. Pour the hot tea and sugar mixture into container
8. Chill and enjoy

Bourbon BBQ Sauce

Instructions
INGREDIENTS
1/2 onion, minced
4 Clove garlic, minced
3/4 Cup bourbon whiskey (Jack Daniels) for the sauce
1/4 Cup bourbon whiskey (Jack Daniels) for the cook
1/2 Teaspoon black pepper
1/2 Tablespoon salt
2 Cup ketchup
1/4 Cup tomato paste
1/3 Cup Cider Vinegar
1/4 Cup Worcestershire sauce
1/2 Cup brown sugar
1/3 Teaspoon Hot Pepper Sauce
1 Tablespoon Webber Dry rub
1 Chipotle pepper (optional spicey)
• When ready to cook, set grill temperature to 350˚F and preheat, lid closed for 15 minutes.
• In a large skillet combine the onion, garlic, and whiskey. Simmer for 20 minutes on the Traeger or until onion is translucent.
• Mix in the ground black pepper, salt, ketchup, tomato paste, vinegar, Worcestershire sauce, brown sugar, and hot pepper sauce.
• Bring to a boil. Reduce the heat on the smoker to 225˚F and simmer for 20 more minutes.
• Run sauce through a strainer if you prefer a smooth sauce or blender. Use on your favorite BBQ recipes. Enjoy!

1 lb pork 1-2 pork chops
1 large onion reserve ¼ cup for later
1 green pepper or mix of red and green peppers.
2-3 cloves of garlic
24 oz can of pinto beans
24 oz can crushed tomatoes.
2-3 Beers 1 strong beer for the chili and 1-2 for the cook
¼ cup chili powder
Salt and Pepper to taste

Instruction
Crockpot method
Cut the meat up into bit sized pieces, cut up the peppers and onions. Combine meat, onions, peppers, beans, tomatoes, beer and spices into crock pot and cook for 5-8 hours
Server with reserved onion, cheese and sour cream.
Insta-Pot
Cut the meat up into bit sized pieces, cut up the peppers and onions. Sauté’ onion and peppers in the Insta-Pot for 10 minutes. Add the garlic and sauté’ for 2-3 minutes Combine meat, beans, tomatoes, beer and spices and chipotle peppers into Insta-Pot. Cook on high pressure for 45 minutes. Let the pressure release naturally or sit for an hour. The chill will remain blazing hot in the pot for 90+ minutes
Server with reserved onion, cheese and sour cream.
Chili freezes will up to 6 months

ingredients
6-8 granny smith apples
1 cup sugar
2 tablespoons of flour (more or less depending on how juicy the apples are
¾ teaspoon of cinnamon
¼ teaspoon nutmeg
1 Tablespoon of Molasses
½ stick of softened butter
2 Tablespoons of shortening
Peel and slice 6-8 apples and place in a large bowl
Line bottom of pie pan with crust.
• Combine sugar, flour, cinnamon and nutmeg in a small bowl
• Spread 3T of the sugar/flour mixture in bottom crust.
• Mix sugar and cinnamon nutmeg mixture over the apples
• Fill the pie plate with the sliced apples.
• Dribble 1T of molasses over of the apples (I like Grandma’s brand molasses)
• Scatter 10 dime-size pieces of butter over apples.
• Put top crust on and weld edges with water
• Mix 1t soft butter with 2ts shortening and spread over top crust. (I also sprinkle a small amount of cinnamon and sugar for flavor on crust)
Cut slits in crust to allow steam to escape.
Bake 4000 for about an hour.

Tequila BBQ-ribs

These ribs are very easy to make just follow the direction and you will be successful
Tequila BBQ-ribs
INGREDIENTS
• 3 Racks St Louis style ribs, trimmed and membrane removed
• 4 Tbsp Traeger rub
• 6 Tbsp butter
• 1 1/2 cups brown sugar
• 1 1/2 cups agave + one shot Tequila
• 8-12 Piquante’ Peppers Whole (sweet red peppers)
PREPARATION
When ready to cook, start the Traeger grill on Smoke with the lid open until the fire is established (4 to 5 minutes). Set the temperature to 250 degrees F and preheat, lid closed, for 10 to 15 minutes.
Season ribs with Traeger Rub and place directly on grill grate rib side down or in a Traeger rib rack with the bone resting on the rack. Cook for 3 hours.
Spritz the ribs every 45 minutes with apple juice
Mix together in a bowl or blender
6 Tbsp butter
1 1/2 cups brown sugar
1 1/2 cups agave + one shot Tequila
Fine chop 8-12 Piquante’ Peppers Whole (sweet red peppers)
Stack 2 pieces of tin foil on the table large enough to cover one rack of ribs. In the center of the foil place 3 tablespoons butter, 1/2 cup brown sugar and 1/2 cup agave. Place the rib rack meat side down on top of the brown sugar mixture and wrap tightly. Repeat with remaining 2 racks.
Place all ribs directly on the grill grate meat side down and cook an additional 1-1/2 to 2 hours or in the over on lowest setting until internal temperature reaches 203 degrees F.
Remove ribs from the grill, let sit for 60-90 in the foil slice and enjoy!

Rub of Choice
Full Sauce Recipe
1 cup honey
1 cup sriracha
1/2 cup soy sauce
2 tbsp sesame seed oil
3 tbsp unsalted butter
HALF Sauce Recipe
1/2 cup honey
1/2 cup sriracha
1/4 cup soy sauce
1 tbsp sesame seed oil
2 tbsp unsalted butter
2 tbsp sesame seeds, for garnish
• When ready to cook, start the Traeger grill on Smoke with the lid open until the fire is established (4 to 5 minutes). Set the temperature to 375 degrees F and preheat, lid closed, for 10 to 15 minutes.
• While grill is preheating, dry off chicken wings with a paper towel. Mix the Traeger Chicken rub with the cornstarch and coat both sides of the chicken wings.
• When the grill is heated, place the wings on the grill for 35 minutes flipping half way through.
• While the wings are cooking, mix the honey, Sriracha, soy sauce, sesame seed oil, and unsalted butter and heat on a stove top.
• After the wings have cooked for 35 minutes, check the temperature. The minimum temperature must reach an internal temperature of 165 degrees F. An internal temperature between 175 to 180 degrees F may yield a better texture.
• When wings are done, place in large bowl and toss with the warmed sauce.

INGREDIENTS
• 3 tablespoons butter
• 3 tablespoons all-purpose flour
• 3 cups chicken stock
• 2 cups whipping cream
• 2 tablespoons butter
• large onion, minced
• 1 large carrot, peeled and finely diced
• 1 large green bell pepper, seeded and finely chopped
• 3 jalapeno chilies, seeded and finely minced
• 1 cup grated swiss cheese
• 1 cup grated cheddar cheese
• salt
DIRECTIONS
• Melt 3 tablespoons butter in heavy pan over low heat. Add flour and stir 3 minutes. Mix in stock and cream.
• Increase heat and bring to a boil stirring constantly. Reduce heat and simmer until thickened, stirring occasionally, about 10 minutes.
• Meanwhile, melt 2 tablespoons butter in a heavy skillet over low heat. Add onion, carrot and green pepper. Cook until soft, stirring occasionally, about 8 minutes. Mix in jalapenos.
• Add both cheeses to cream mixture and stir until melted. Mix in vegetables. Season with salt to taste and serve.

Ingredients
• 1 lb dry navy beans or pinto beans or 24 oz canned navy or Northeast beans
• 6 cups water
• 2 tablespoons salt
• 1 tablespoon vegetable oil
• 1/2 uncooked lb bacon diced
• 2 cloves garlic minced
• 1 medium onion diced
• 1/4 cup tomato paste
• 1/4 cup dark molasses
• 1/2 cup brown sugar
• 3 tablespoons balsamic vinegar
• 2 tablespoon Worcestershire sauce
• 1 Tablespoon chili powder
• 2 teaspoons of Cajon spice
• ¼ cup Agave
• Salt and pepper to taste
Instructions
1. Place dry beans in a large pot. Pour water over top and stir in salt. Cover the pot and allow the beans to soak overnight.
2. The next day, drain beans. Rinse beans and set aside.
3. Meanwhile, heat oil in a large saucepan over medium-high heat until shimmery. Add diced bacon, garlic, and onion to pan and stir frequently until bacon begins to crisp, about 8-10 minutes.
4. Reduce heat to medium and whisk tomato paste, molasses, sugar, vinegar, Worcestershire sauce, and chili powder into mixture. Bring to a simmer, stirring constantly and then stir in rinsed beans and 3 cups water or 2 cans of beer
1) Cover beans and bring to a low boil over medium-high heat. Remove from heat and transfer to a 4-qt slow-cooker. Cook beans on high 4-5 hours until beans are soft and sauce begins to thicken. Keep beans in slow-cooker on "warm" until ready to serve. (beans will thicken up even more the longer they sit)
Instant-pot instruction
1. Dice the beacon and sauté beacon and onions and garlic for 8-10 minutes
2. Add beans and BBQ sauce
3. Lock the lid in place and turn the valve to SEALING. Cook on HIGH pressure for 20 minutes.
4. When the timer goes off press CANCEL and let the beans naturally release for 30-40 minutes before turning the vent to VENTING to release any excess pressure and opening the lid.
Creole Seasoning
• 2 1/2 tablespoons paprika
• 2 tablespoons salt
• 2 tablespoons garlic powder
• 1 tablespoon black pepper
• 1 tablespoon onion powder
• 1 tablespoon cayenne pepper
• 1 tablespoon dried leaf oregano

Combine all ingredients thoroughly and store in an airtight jar or container.

The BBQ Roast Beef Sandwich
Ingredients
• Eye of Round beef
• Brioche Rolls
• Heinz 57 sauce
Process
1. Roast, Smoke Grill until a internal temperature of 115 and carry over to 135
2. Carry over means to wrap it in foil and allow it to rest and the temp to climb to 135
3. Once the internal temp is 135 slice it thin and pile it high
Raspberry Iced tea
Ingredients
• 1 cup fresh or frozen raspberries
• 1 lemon sliced into quarters
• 2 quarts of water = 4 -16oz bottles of water or 8 cups of water
• ¾ cup of sugar
• Tea bags for 2 quarts of iced tea
Process
1. Boil the water in a large pot larger than 2 qt
2. Add the sugar to the boiling water and allow the sugar to dissolve. Let the water turn clear and return to a boil
3. Add the fruit and let the water return to a boil
4. Turn off the heat
5. Add the tea bags and let steep for 2-3 minutes and remove the tea bags
6. Let cool
7. Place the lemon in the bottom of pitcher and strain the contents in the from the pot into the pitcher.
Refrigerate and server

Chicken Taco Salad
Grilled chicken
1 chicken breast
Marinade
¼ cup taco seasoning or 1 package
2T of lime juice or ½ a fresh lime
3T of cooking oil
Salsa
1 cup of cilantro
1 plum tomato
½ or more of a jalapeno pepper (to taste)
2 cloves of garlic
The juice from 1 lime or 4T
½ cup or 1 slice of onion
Pinch of salt
Guacamole
1-3 whole avocado’s
1T salsa
Mash the avocado
Mix in 1T of salsa and combine
Salad
2 cups of bit sized lettuce
½ a plum tomato
½ avocado sliced
2 thin sliced onion
1-2T Sliced olives (to taste)
Optional sliced jalapeno pepper ( I don’t use them)
1T sour cream
1T guacamole
1Tsalsa
¼ - ½ Cups of Mexican, taco or cheddar mix cheese
Corn tortilla chips
Grill the chicken until fully cooked. Cut into bit sized pieces. In a large bowl/plate or tray add the lettuce and then the other vegetables on top of the lettuce. Add the sour cream, guacamole and salsa for the dressing. Put the chicken pieces in the center of the salad cover with cheese. Crumble a couple corn chips over the top and serve

TheReuben Sandwich
Ingredients
• 1/4-1/3 of a pound of Corned Beef
• 3-5 thick cut Swiss Cheese
• 1-2 Tablespoons of sauerkraut
• 2 slices Rye or Marble Rye bread
• 1 Tablespoon of thousand island dressing
• 2 teaspoons of butter
Optional
• Dill Pickle
• Potato chips
Butter the Rye bread and place it on the fry pan @ 350 degrees for about 5 minutes. Cover the upside of the bread with thousand island dressing. Remove the grilled/toasted bread, add the corned beef to the pan and cover the meat with sauerkraut. Add water for steam and cover for a minute. Put the cheese on top of the sauerkraut and add a little more water to the pan and cover for 2 minutes. Remove the corned beef and place on the grilled bread and slice. Dress the plate with a pickle and chips.

Buffalo Chicken Calzone
Buffalo Chicken Calzone
• Boneless Chicken breasts
• Frank’s hot sauce
• Pizza dough, I use Pillsbury pizza dough
• Mozzarella cheese
• Blue cheese
• Red onion- thin sliced or diced
• Cherry pepper rings
• Butter
Here is what I do;
I eyeball everything. I use enough boneless chicken for the four of us, my wife, 2 kids and me. Marinate the chicken breast in Italian salad dressing for a couple hours.
• In a mixing bowl put about ½ cup of Frank’s hot sauce and a 1/3 stick of butter at room temperature, a pinch of salt and pepper. Genially mix
• Grill the chicken to cook it fully. After it’s cooked I cut the chicken into bite size pieces and while still hot drop it into the mixing bowl and mix it about and coat the chicken pieces
o Note you don’t want to drown the chicken but a nice thick coat
• You want a piece of dough that can cover your fist, I put “about ½ cup” of Mozzarella cheese down
• then a couple table spoons of Blue Cheese
• Red onion, Kids hate onion so none for them, Wife like some so a table spoon, me Love them so I load it up
• 3-4 Cherry Pepper ringers
• Buffalo Chicken last divided equally between all the calzones
Fold the sides up and seal the calzone and place it on a greased baking sheet with sealed end down or the cheese side up
Bake 425 for 15-20 minutes.
I have never measured anything more cheese if you like more Mozzarella. The basic ones I make for my girls are Mozzarella cheese and Buffalo chicken one, I load it up for myself
