Spinach Puffs
SPINACH PUFFS
It's always tough to find a GOOD appetizer. There are the 'boring' healthy ones and then the tasty, savoury ones that you want to take more of but also don't want to be greedy so you just take 2 and hope others don't eat them.
The latter is what these spinach bites are. I tried one after I made them.. and just kept going back for more! It was that good. The only thing I would change is maybe use a little less egg.
What you'll need:
1 small container of Philadelphia cream cheese
1 egg
1/2 cup feta
2-3 dashes of paprika
1-2 dashes of basil
1 cup spinach
puff pastry
To get things going, heat up the cream cheese in a microwavable bowl. For about 30 seconds. Add in the egg and mix.
In a separate bowl, mix together feta, spices and spinach. Combine both bowls into one.
Roll out and cut your puff pastry into 4's and place each square into one hole in a SMALL muffin tin. (or you can cut into 3's and use a regular sized muffin tin)
Scoop the spinach mix into the muffin tin and take the corners of the puff pastry and fold them in.
Bake at 350 until brown!

Cheesy Beer Soup!
CHEESY BEER SOUP! || HOW TO MAKE BEER CHEDDAR SOUP
Well.. after a nice 20 degree day - it's now dipping back into the single digits. So of course we had to make some delicious soup to warm ourselves up. Our choice this time: Beer and Cheddar Soup and it was TO DIE FOR.
I can't even express how delicious it is. If anyone's been to Jack Astor's in Canada, they have the best Beer and Cheddar Soup - and this one tasted just like it! I was super happy to figure out a copycat recipe, let me tell you! The key to this was using Rickard's Red and 3 different kinds of cheese.
It is a bit tedious though - one thing I'd recommend would be to reduce and simmer the beer while you prepare the soup base.
So here's what you'll need to make a yummy cheddar ale soup.
1 onion - chopped
1/2 cup melted butter
2 garlic cloves - chopped
pinch of thyme
1/2 teaspoon rosemary
2 heaping tablespoons of flour
1 1/3 cup chicken stock
1 1/2 cups milk
1 1/2 cups cream
1 can Rickard's Red
6 tablespoons Parmesan Cheese
1 1/2 cups shredded asiago cheese
1 1/2 cups shredded cheddar cheese.

Toasted coconut meringue
Super easy and quick. This coconut meringue cookie starts as a serious fluffy meringue before baking to crispy deliciousness.
So here's how to make a simple coconut meringue.
First, 3 egg whites until they are room temp. Then put them in a bowl - preferably a stainless steel bowl.
With a mixer, beat the eggs on medium until frothy.
Now is the time to add in the sugar.. add in 2 tablespoons at a time, while you continue to beat the eggs.
Continue to beat the eggs for an additional minute after all the sugar is in.. Make sure the sugar has dissolved by feeling part of the meringue between your fingers.. if you can feel sugar granules.. add in vanilla and keep on beating.
Put the mixer on high.. continue to beat until you have STIFF peaks (incorrectly keyed as hard peaks in my video)
you know you have stiff peaks when you pull the mixer up and the meringue forms a peak that stands STRAIGHT up and does NOT fall over to form a 'hook'
Once thats done.. time to put it in a piping bag and pipe onto a baking mat or onto parchment paper.. top with toasted coconut.
Bake for an hour and 15 minutes at 225 degrees.. THey will be done once they are hard on the outside and can come off the sheet with ease. If you tap the bottom it should also be hollow.

Deep fried hard boiled eggs
Yum! These deep fried appetizers are just great for a midnight snack ;) The egg wedges are a BIT spicy with a hint of parmesan. Great way to start out when deep frying eggs.
So here's how to deep fry hard boiled eggs!
First you'll want to hard boil some eggs. Place 2 in a pot with water covering them. Bring to a boil on hight.. once boiling, turn the heat down and let them boil for 6 minutes.
Once thats done, take the eggs out and put in an ice bath (bowl of ice water). Let them sit, then PEEL!.
Cut the eggs into wedges, take out the yolks.
Dip the wedges in flour, then (separate) egg yolks, and then a panko mix (panko, parmesan cheese, thyme, cayenne papper, salt, pepper)
once coated, drop into a pot of hot oil and deep fry until golden brown.
To make the dip, take the boiled egg yolks and mix together with sriracha mayo and caesar dressing, DONE.

Learn how to make lovely crab & cream cheese pinwheels
CRAB & CREAM CHEESE PINWHEELS
YUM. This delicious crab puff pastry is amazing. I ate 3. It's super easy and for this one, I used canned crab. So here's how to make puff pastry pinwheels!
The inside of the cream cheese pinwheels - first, you're going to want to heat up a brick of cream cheese on the stove.. make sure it doesnt burn. Add in garlic, oregano, parsley, grated cheese and finally.. the CRAB. Mix it all together .
Take off the burner to cool.
While it's cooling, flour the sheet of puff pastry, so it doesn't get moist.
Once the mixture has cooled.. lay a small line across the bottom of the pastry. Roll the bottom of the sheet over the mix so that it's covered but you still have a ton of pastry left. Cut off the part with the mix. Slowly ROLL it up from one side to the other.
Continue with the rest of the mix and pastry.
Brush the tops with butter and bake for 25 minutes at 350.

Prepare garlic tomato spaghetti in 9 minutes in a single pan
ONE PAN NINE MINUTE PASTA (GARLIC TOMATO SPAGHETTI)
Talk about YUM. This super easy one skillet spaghetti is done in NINE minutes. Today's recipe is garlic cherry tomato pasta!
First, throw some minced garlic into a large pan, heat it up, then add some green onions, mushrooms, cherry tomatoes and some parsley/oregano.
Sautee. Once they are lightly browned, add in some chicken broth (or you can use vegetable broth if you want to make it vegetarian)
Bring that to a boil - it shouldn't take too long. Add in your pasta.. cover if possible and wait until it's nice and done. Mix all together and EAT!
Top with some parmesan!

How to make delicious jerk chicken tacos
JERK CHICKEN TACOS
You won't regret this jerk chicken recipe if you like your jerk rub a little
less spicy than normal. This homemade jerk marinade is to die for!
So here's how to make Jerk Chicken tacos!
First off, I just wanna say that this is NOT the Jamaican way of making jerk chicken. I wanted a somewhat less spicy version of this, so this is what happened! :)
So here's the recipe.. throw all of this in a mixer:
1 teaspoon ground allspice
1 teaspoon packed brown sugar
1 teaspoon dried minced onion
1/2 teaspoon dried garlic powder
1/2 teaspoon ground nutmeg
1/2 teaspoon black pepper
1/2 teaspoon ground ginger
1/4 teaspoon cayenne pepper
1/3 teaspoon chilli pepper flakes
1/4 cup vegetable oil
Mix together.
Put your chicken in a bag - I used 12 chicken fillets, 6 in each bag.
Put half of the rub in one bag, half in the other. Seal up and shake/rub so that the chicken is coated with the rub.
Refrigerate and marinate for 4 hours or more.
WHen ready, bake at 350 for 25 minutes, then broil for 10 to get nice and crispy.
Put in a taco and top with all your favourite toppings! In this video, i used, tomatoes, avocados, green onions, lettuce, sour cream and a sriracha mayo.

Mango explosion puff pastry
This delicious mango pastry seems like an odd combination, but the mango chutney and cream cheese taste amazing. So here is my recipe for Mango puff pastry balls!
First, mix a brick of cream cheese and about 1/4 cup of mango chutney in a bowl. Mix well.
Unfold the puff pastry and cut into thirds each way so you have 9 pieces.
Put a dollop of the mixture onto the piece and fold into a ball.
Do it with all of them then repeat with the second puff pastry sheet.
Bake at 350 for 25 minutes.

Caramelized onion and brown sugar pizza
One of the best homemade pizzas I've ever made! The brown sugar makes it POP and have a delicious distinct taste.
First we'll start with the caramelization. In a pan, heat up some butter on medium.. the more the better the caramelization but make sure it's not like INCHES of melted butter.
Add in chopped onions (also note that once an onion carmelizes, it appears that you have LESS.. they get smaller - so chop MORE than you want)
let that heat for about 5 minutes on medium before adding in some brown sugar.. let it cook, stir, add in more brown sugar. then let it sit for a bit... stir occassionally.. you'll see it starts to brown. Continue until all the onions are a golden brown.

or you can use a store bought pizza like me.. Top it with what you like, including the onions - I used tomato sauce, pepperoni, roasted red peppers, feta cheese, and bacon! mmmmmm
Bake at 350 until the cheese is melted (if you made your own dough, bake until bread has risen and is crispy on the outside.

Cream cheese crab dip
The best crab dip recipe I've ever made. If you don't know how to make dip, this is probably the easiest appetizer recipe to start with.. It goes good for a regular family dinner, double date or dinner party!
Ok so, if you've ever been to Jack Astors (is that outside Canada?!), you may have had the Lobster and Crab dip. It only takes about 20 minutes and tastes exactly like the the dip at Jack Astors.
All you need is: crab, cream cheese, cheddar cheese, salt, pepper, oregano and parsley!
To start, the best idea would be to warm up one packet (brick) of cream cheese. Heat that up in a pan. Stirring occasionally so it doesn't burn.
NEXT. Add in garlic, parsley, oregano and pepper. Keep on stirring. You can upgrade this dip too by adding bacon, hot peppers, sriracha.. whatever your heart desires!
Once the cheese has melted in and you've stirred in the herbs, time to add a TON of cheese... and I mean a TON. (I didn't say this was healthy). I used probably 3 cups worth of shredded cheddar cheese. Stir that in.. It doesn't have to melt, just mixed in.
Once all thats mixed in, put it in an oven safe pan. Top with MORE cheese and bake at 350 until the cheese is bubbling.
This is something you won't regret. Seriously so good. I don't recommend making it often though.. cause I'm sure it's pretty bad for you. YOLO.

How to make poached eggs
This simple poached eggs recipe is sure to be simple and end in deliciousness. Poaching eggs in boiling water is the best way to poach an egg without vinegar.
The easy way to do this would be to bring a pot of water to a boil.
While youre doing that, crack your eggs into a bowl or small cup.
When the water is simmering, STIR quickly in one direction so that you the water is moving in a circular direction. Quickly add in an egg.. You need to do that while the water is going circular so that the egg whites wrap around the yolk perfectly.
Leave it for three minutes EXACTLY. Then take it out and either let it cool off and dry or dump it in a bowl of ice water so it doesnt over cook.
I put mine on top of an English muffin (or you can use toast) with avocado, bacon and cheese! YUM.. Take out the bacon for a delicious vegetarian recipe!

Non-alcoholic tiramisu shots
Shot glass dessert! This is a super easy tiramisu recipe! I LOVE the stuff but I can't a lot. So here's my mini tiramisu SHOTS. Quick & easy without eggs and alcohol. I used mascarpone though!
So to start, let's make the cream.
In a bowl, mix 1/2 cup mascarpone cheese, with 1/2 cup whipping/heavy cream, 2 tbsp sugar, 2 tsp vanilla extract.
Use a mixer to whip it - make sure it's super fluffy and that there is no liquid anymore - keep it cool while you brew a cup or shot of espresso.
Half 1 lady finger and dip it in the espresso once or twice. NO MORE otherwise it will soak and crumble apart. - place it in the bottom of the shot glass.
Top with the mascarpone cream mix and cocoa shavings!
VOILA! You're done!

Jalapeno popper bombs
A great homemade appy for those who love cream cheese jalapeno poppers! These stuffed jalapeno popper bites are cooked with just cream cheese, diced peppers and puff pastry. So here's how to make baked jalapeno poppers!
First, in a bowl, mix your package of cream cheese and your diced jalapenos. Mix it evenly.. you may have to soften it a bit in the microwave.
Once that's done, cut your puff pastry into 9 pieces. Place a dollop of the cream cheese mix onto a piece of the pastry.
Roll it up into a ball. Continue on with the rest of those.
Put onto a greased pan and bake for 30 minutes at 350!

How to make hash brown nachos
These deluxe nachos are probably the best I've tasted.. and I've had MANY. Instead of chips.. I use HASH BROWNS! Pretty extreme right? They're also made..... ON THE STOVE TOP!
Heres how to make them.
In a pan heat up some butter. Add in some frozen has browns.. the amount is up to you.. depends on how much you want to eat.
Brown them up real nice. That's when you start adding toppings. I used green onions, garlic, bacon, beef, salt, pepper and CHEESE of course.
Stir all that together until the cheese has melted and it's super cheesy. Mmmmmmm.
Compliment with some salsa and sour cream!

Grilled corn on the cob
It's gettin hot out! That means bustin out the BBQ. This delicious grilled corn on the cob recipe includes SMOKED cheese to give it a big KICK. So, it's basically smoked corn, expect.. not.
Here's how to make BBQ corn on the cob!
Start by taking out some foil.. enough that it will cover the cob. Put a little oil in a line. Add in some pepper, salt, smoked paprika.. then roll the cob over it to spread the oil over it.
Cover with grated smoked cheese (I used blue cheese).. then roll up in the foil.
BBQ on high until its slightly charred. MMMMM

5 minute guacamole recipe
This guacamole dip is SUPER easy and takes literally 5 minutes to make. It's one of my FAVS. What you'll need to make the homemade guacamole dip is just 5 ingredients!
First scoop out the avocados, removing the skin and pit. Put them into a large bowl.
Add salt, pepper, diced tomatoes and onions. MIX MIX MIX. Add in lemon juice, then hot sauce. If you want to make it spicier, add in jalepenos.
THAT'S IT. So simple, so easy and most importantly, SO GOOD.

How to make sweet bread
This is one delicious homemade sweet bread. This recipe is fairly straight forward and easy to make, you must follow the recipe exact though, otherwise it will be flat. You don't HAVE to braid it.. I did and used 3 strands..but it's an easier way of handling it otherwise it will become a MASSIVE loaf of bread. So here's my sweet bread dough recipe!
If you're wondering what is IN sweet bread? A LOT of sugar & butter. It seems pretty heavy but if you bake bread properly, you'll get a nice fluffy bread that doesn't take like a heart attack in a loaf.
Bread ingredients: sugar, milk, butter, yeast, water, eggs and flour. This is not gluten free!
How to bake bread: mix milk, butter and eggs into a pan, heat, bring to a boil and then cool.
In another bowl, mix yeast, water and sugar. leave for 15 minutes.
Beat 4 eggs.. Then mix ALL those ingredients with 7 cups of FLOUR (not the self-raising kind!!!)
Let the bread rise for 3 hours (minimum). Then form into braids. Leave the bread to rise again for another hour. Then bake at 350 until golden brown!
YUM! Enjoy!

Classic Poutine Recipe
A classic Canadian staple - french fries, gravy and cheese curds. This classic poutine recipe is one for the books.
From 2am drunk snacks to lunch on a Sunday afternoon, you can find this Canuck treat in practically every city. Here's how to make poutine at home - one of the BEST poutine recipes ever.
Start off by washing off a Russet (or baking.. which is what I used) potato.
Cut in half, then cut the halves in half, then those in half and continue until you have some good fry shapes going.
Dunk those in a bowl of water for at LEAST 1 hour.. Then dry them off with a paper towel.
Heat up some oil in a pot.. Medium-high.. Please keep a LID nearby so if you accidently cause a fire, you can extinguish it.
Deep fry your potatoes until golden brown.
The best kind of gravy to use for poutine is chicken gravy. So you can either use leftovers from a recently cooked chicken, or use store bought, however it's better homemade.. I used storebought in this recipe because I didn't have time to cook a chicken ;)
Cover the fries with cheese curds - add the hot gravy and then EAT!. you will not regret.

How to make quinoa macaroni and cheese
Skinny Mac and Cheese! This is a great recipe for individual mac and cheese - I used GoGo Quinoa macaroni noodles! So here's the recipe for a creamy quinoa macaroni and cheese! This also works for other quinoa pasta recipes!
First things first, make the noodles! Bring a pot of water to a boil and then add in the macaroni noodles.
While those are cooking, in a pot, heat up some butter and quickly saute some green onions. Once cooked, add in 1 cup of milk. Quickly add in some flour.. You'll have to keep stirring otherwise the milk will burn to the bottom of the pan.
It should start to get thicker. If it doesnt, add in some cheese.. it will then thicken up a lot more. If it does thicken, add the cheese anyway. I used a blend of mozzarella, cheddar and monterrey jack.
Taste it to make sure it tastes yummy.
Then fill the personal sized oven safe bowls with the cooked macaroni. Then drench it in sauce and cover with grated gruyere cheese.
Bake at 350 until the cheese has browned. I also broiled it a little bit so that it got a bit more brown. and it was SO GOOD.
