Not sure what you want for dinner tonight?

Why not try out this recipe for a healthy and easy Coconut Chicken Curry with Basmati rice and Garlic Naan Bread

1 packet of Lee Kum Kee Coconut Curry Base sauce
350g of chicken or tofu
200g of fresh or frozen vegetables
Half a tin of light coconut cream or milk

Saute the vegetables in a tablespoon of garlic and ginger infused olive oil (infuse the oil by adding 1 teaspoon of each to oil and infuse for 30 seconds)

Remove vegetables, and lightly brown chicken until nearly cooked.

Add the vegetables back to the wok with the protein, and stir through the base sauce.

Pour over the coconut cream or milk, stir through, and simmer until thickened.

Accompany with Steamed Basmati rice and Crispy naan bread.

And there's dinner! Yep. Eating healthy does not need to be complicated.
