How to make apple turnovers with a flakey crust
In this video we make apple and pear turnovers. It is not hard, especially if you own a food processor. In this video I do it all by hand.
Equipment needed:
The cutting tool in my video or you can use a food processor.
Work surface
Cutting board
Sharp knife
Wooden Spoon
Scraper tool
Bowls
Large cookie pan
Parchment paper
Pan for filling
Rolling pin
Pot cover as a cutting tool
Ingredients:
250 g All Purpose Flour
226 g Very cold Butter
6 g Fine Salt
6 g Brown Sugar
6 g Apple Cider Vinegar
1 Egg
1 cup Ice cold water
Procedure:
1- In a bowl combine the flour, brown sugar, and fine salt. Mix well.
2- Slice the butter into small pieces, say about 1/4" thick
3- Put these pieces into the flour and cut in with the cutting tool OR Put that butter/flour mix into a food processor and use very short pulses or you will over blend that butter.
4- Mix together the egg and apple cider vinegar in a small bowl.
5- Add the egg and apple cider vinegar to the flour.
6- Using your hand, start to squeeze the ingredients together
7- Add a couple tablespoons of the ice cold water as you squeeze, but add sparingly.
8- Continue this until you get a nice solid dough ball
9- Wrap in plastic and put in refrigerator for 2 - 18 hours.
10- In a fry pan, under medium heat, place the cut apples (or pears)
11- Add brown sugar and cinnamon to you taste. (We use about 2 tablespoons of Brown sugar and a tablespoon of cinnamon powder per apple)
12- Cook till the apples reach a consistency that you like, we like it soft with a little bite.
13- Put cooked fruit into a sealable container and refrigerate till cold.
14- When ready to make the turnovers cut the dough ball in half and put one half in the refrigerator.
15- Preheat the oven to 400°F.
16- Using you rolling pin, roll it out to a thickness of about 1/8".
17- Use the pot cover to cut perfectly round turnover dough.
18- Repeat steps 15 and 16 till all the dough is shaped.
19- Fill each shaped turnover, turn the dough upon itself, seal and crimp.
20- slice vents on top of each turnover.
21- Apply an egg egg wash.
22- bake at 400°F for about 20 minutes or until they are nice and brown.
23- Place on a cooling rack till just warm.
24- nothing like eating a warm and freshly baked turnover.
