The Mediterranean Diet Series For Beginners: 365 Quick And Simple Recipes To Stay Energetic And Fit Without Giving Up Delicious Dishes.

For the dressing:
Two tablespoons lemon juice
One garlic clove, minced
Two teaspoons Dijon mustard
Two tablespoons olive oil
Salt and black pepper to the taste
Cooking Spray

Directions:
1. Heat a pan with two tablespoons oil over medium-high heat,
add the asparagus and sauté for 5 minutes, stirring often.
2. In a bowl, combine the other two tablespoons of oil with the
lemon juice, garlic, mustard, salt, and pepper and whisk well.
3. In a salad bowl, combine the asparagus with the kale, sprouts,
hummus, avocado, and eggs and toss gently.
4. Add the dressing, toss, and serve for breakfast.
