Directions:

squash lengthwise. The squash ribbons will resemble the wide
pasta, pappardelle.
2. In a bowl, mix the ricotta cheese, mint, parsley, lemon zest,
lemon juice, salt, and black pepper.
3. Place mounds of the squash ribbons evenly on four plates,
then dollop the ricotta mixture on top. Sprinkle with the olive oil,
then garnish with the mint leaves.
