oil until well coated.
3. Season with sea salt and pepper, and then spread the
vegetables evenly on the sheet.
4. Bake for 15 minutes, or until tender and lightly caramelized.
5. Take away from the oven and transfer to a serving bowl.
6. Toss with the pistachios, lemon zest, and lemon juice. Serve
warm.
