The Mediterranean Diet Series For Beginners: 365 Quick And Simple Recipes To Stay Energetic And Fit Without Giving Up Delicious Dishes.
Ingredients:
One avocado halved and pitted
10 ounces of canned tuna, drained
Two tablespoons sun-dried tomatoes, chopped
One and ½ tablespoon basil pesto
Two tablespoons black olives, pitted and chopped
Salt and black pepper to the taste
Two teaspoons pine nuts, toasted and chopped
One tablespoon basil, chopped
Directions:
1. Mix the tuna with the sun-dried tomatoes and the rest of the
ingredients except the avocado and stir.
2. Stuff the avocado halves with the tuna mix and serve as an
appetizer.
