Today I thought we could revisit three amazing casseroles that are perfect for making ahead to have a meal ready to go. The bonus here is that they are all low carb! You, of course can switch it up and make these a little more carb heavy if you like, but honestly I don't think you will want to! In the end these three delicious casseroles are satisfying, filling and comforting! It's hard to pick a favorite and my family loves all of these! Hot Chicken Salad is a great take a long for a potluck or in our case community group dinner offering. Chile Rellenos Casserole is an excellent make ahead that you can serve for breakfast, brunch, lunch or dinner plus this can be eaten, hot, room temp or cold. The real gem here is the Spinach, Artichoke and Chicken Casserole that is beautiful enough to serve to guests and definitely one to consider when sharing a meal with others! In all these three are all winners and I hope you give them a try and I hope you love them!
