Daging Masak Hitam Sayang Sarawak
Kalau kenduri kahwin dekat Sarawak,menu daging masak hitam
sudah seperti satu hidangan wajib.Orang Sarawak tidak berapa makan makanan
yang pedas pedas.Menu ini agak manis dari penggunaan gula apong dan kismis goreng.
Resipi ni memang popular lah sejak tahun 70an
Bahan bahannya
1 kilo daging batang pinang
1 paket rempah masak hitam jika ada (boleh beli kat sarawak..hehe)
1/2 mangkuk cili kering kisar
1 labu bawang bombay - goreng hingga layu dan kisar
5 sudu kismis hitam dikisar
2 sudu lada hitam dikisar halus
sedikit gula apong @melaka
Bahan bahan kisar
2 labu bawang merah besar dikisar halus
5 ulas bawang putih dikisar halus
1 inci halia - kisar
1/4 mangkuk kecil kicap manis
minyak sapi
garam
Bahan bahan untuk ditabur
tomato
kacang peas
kacang gajus
bawang goreng
Cara caranya
Perap daging bersama kicap manis ,cili kering kisar dan lada hitam kisar sekurang kurangnya 1/2 jam.Goreng bawang bombay @holland sehingga layu.Kemudian masuk kismis hitam.Angkat dan kisar sehingga halus.
Panaskan sedikit minyak masak dan minyak sapi.Masuk 4 sekawan dan daun pandan.Tumis bahan kisar sehingga wangi.Kemudian masuk daging yang telah diperap.Masuk garam secukup rasa.Tabur dengan tomato,kacang peas dan kacang gajus
Black and sweet beef
1 kilo tenderloin meat
1/2 small bowl blended dried chilies
1 bombay onion -fried and blended
5tbsp black raisins -blended
2tbsp black pepper
palm sugar
2 big onions-blended
5 garlics -blended
1/4 small bowl dark sweet soya sauce
ginger - blended
ghee
salt
Garnishing ingredients
Tomato
green peas
cashew nuts
crispy fried shallot
Methods
1.Saute bombay onions.Add in black raisins,then blend finely
2.Marinate tenderloin meat with blended dried chillies,dark sweet soya sauce,black pepper and
palm sugar for 1/2 hour
3.Heat cooking oil and ghee
4.Saute cardamon,cinnamon,star anise,cloves and screw pine leaves
5.Add in blended ingredients .Saute till fragrant
6.Add in marinated meat.
7.When beef is ready,garnish with tomatoes,crispy fried shallots,green peas and cashew nuts
