Makguksu is a traditional dish of Gangwon-do, made of buckwheat noodles served in the liquid from kimchi. It is also referred to simply as memil guksu, or just 'buckwheat noodles.' The noodles are cut from dough made of buckwheat flour and hot water and are boiled. The noodles are placed in a serving bowl, the kimchi liquid is poured over them, andthe dish is garnished with slices of kimchi, pickled cucumber, sesame salt, and chili powder.
