CHICKEN
leg and thighs
MARINADE
1/2 gallon buttermilk
1 small bottle habenero Tabasco
FLOUR
3 cups all purpose flour
1 tbs Tony Chacherie (or any Cajun seasoning)
1 tsp paprika (I use Hungarian)
1 tsp garlic powder
1 tsp cayenne pepper
1 tsp salt
(if no Cajun seasoning, change tsp to tbs, salt to taste)
BATTER
3 large eggs
1/3 cup previous buttermilk mixture
OIL
peanut oil
marinate chicken 4 to 6 hours in buttermilk, then take out of fridge to bring closer to room temperature before frying.
shake buttermilk off of chicken(so it's not dripping) roll in batter, roll in flour, fry at 325 to 350 deg until crust is done, and internal temperature of chicken is around 170 deg. drumsticks take abt 14 to 15 minutes, boneless thighs about 12 minutes. watch your oil temperature, cold chicken will lower the temperature, so fry only a few pieces at a time, 2 or 3 max. set aside, salt to taste, enjoy.
this is my first time cooking anything live, sorry for the begging of the video having no sound or video, this was really a test of how to film recipes live.
