Snapper Rig:
Rod: Gale Force Inshore Reef Slayer https://www.galeforcefishing.com/shop/inshore-reef-slayer-rod
Hook: Between 1/32 and 1/4 oz jigs. Experiment with size and see whats working. Each day will be different!
Leader: 10 to 15 ft of 15 lb fluoro
Bait: Shrimp with no head or tail (taking the heads and tails off is not always necessary. Experiment or even try peeling the shrimp!)
Chum: Make sure you always have chum in your chum bag! We use 1 to 2 blocks an hour.

Recipes:
Whole Fish with Butter and Parsley:
1. Pour over butter mixture (4 oz salted butter, minced garlic and fresh parsley).
2. Salt fish.
3. Squeeze of lemon on top of fish.
4. Stuff fish cavity with butter mixture, extra parsley & lemon slices
5. Cook fish at 425 on smoker, grill or oven for 6 to 8 minutes per side (or until fish is white and flaky).

Whole fish with Ace's Seasoning:
1. Season fish generously with Ace’s seasoning and olive oil
2. Cook fish at 425 on smoker, grill or oven for 6 to 8 minutes per side (or until fish is white and flaky).

Snapper fillets:
1. Season fish fillets to your liking. We seasoned ours with salt and pepper.
2. Coat fish fillets in flower, egg, then Panko
3. Cook fillets in pan (or deep fryer) with oil of choice at medium-high heat for 2 to 3 minutes per side or until fish is white and flaky and panko turns a golden brown color.

Tartar sauce:
1/2 cup mayo
3 tbs chopped dill pickle
1 tbs fresh dill
1/4 tsp Worcestershire sauce
1/2 tsp Dijon mustard
Lemon juice from half a lemon
Salt and pepper to taste
