Vegan Curry Like You've Never Seen Before

You've got to check out my recipe for vegan cauliflower and bean curry. I put kidney bean, garbanzo beans and cauliflower along with a curry spice mix and a can of tomatoes at the primary ingredients. Add in some ginger, fresh tomatoes, rosemary and oregano. No animal products are needed to make a great vegan curry just some authentic Indian spices and beans.

This delicious curry can be eaten as is or served over rice, millet, quinoa or rice noodle as my favorites. This recipes makes around 4 servings and is absolutely delicious. Feel free to add spicy elements if you wish, jalapeno or hot sauce would go well.

I really enjoy raw cauliflower being the base of this recipe, it's high in nutrients, high in fiber and low in calories. When you blend it, it turns into somewhat of a rice texture. It eat well on it own but does blend nicely with rice or other grains. This recipe takes about 10 - 15 minutes to make which is really nice, as most curries especially non vegan take much longer to make.
