Bacon Skillet (Stove Top Casserole) – One Pot Meal – For Breakfast, Brunch, Lunch or Dinner

This is one of those recipes that will help get you through the current food shortages and make all this nonsense more tolerable. You can use any bacon in this recipe – thick, thin, market, precooked, even that turkey stuff. You can use any potatoes – fresh, canned or frozen.

You can spice it up if you want but it is hard to beat the flavor of these basic ingredients when they are fried together. If you are on a tight budget and need to feed a crowd you can double your potatoes, onions and eggs. You will still have plenty of flavor and fat in this dish.

This kind meal is sometimes called Farmer’s Breakfast. You throw all your breakfast favorites in one skillet and cook they together. No big mess to clean up, so you can get out the door and take care of the critters or get the garden hoe'd before it gets too hot.
