Kale Pesto with Kelp Noodles (recipe below)

Like any good pesto, this kale pesto is nutty, buttery, garlicky, and smooth. Though we like to eat pesto with kelp noodles, it is super versatile and can be used in a variety of dishes.

Ingredients:
- 1/2 cup of sprouted nuts and seeds (we used a mix pumpkin seeds and almonds)
- 1 cup EVOO
- 4 cups dark leafy greens (i.e. kale)
- 4 garlic cloves
- juice from 1/2 lemon
- sea salt
- black pepper

Process:
1) Chop kale and steam for 10 minutes.
2) In a Vitamix, blend all ingredients, but the kale, for about 10-15 seconds.
3) Once the kale is tender, add it to the Vitamix, and blend until smooth.
4) Serve with your meal or pasta/noodle of choice, and enjoy!
