Leather Beans

This is an old one. In the Appalachian Mountains this was prepared as a Thanksgiving or Christmas dish. It allowed you to forget briefly that it really was cold outside and it sucked too.

Bring some water to a boil and toss in the beans. Check occasionally to ensure they’re submerged. Hours later fry a piece of bacon till it’s nice and crispy and then break it up into small pieces and toast a half of a cup or so of sliced Almonds. Bring the heat back up after removing the beans and french cutting them as you also remove the stems. Toss everything into the pot and cook it for fifteen minutes or so. Test to make sure the beans are tender. Add soy saucce and a bit of pepper and dig in. Butter is a good one to have on this too.
