Hoisin sauce BBQ chicken

3 Tbsp of Hoisin Sauce
1 Tbsp oyster sauce
2 Tbsp honey
2 Tbsp olive oil
1 tsp fish sauce
orange Zest and about 1 Tbsp of orange juice
Couple shakes of black pepper

Make a glaze out of 1 part honey and one part Hoisin sauce. Use it frequently towards the end.

The chicken thighs are opened up and flattened to an even thickness and then added to the marinade in a ziplock bag, mixing every time you remember it until the next day.
The following day place the meat on skewers. If using the bamboo skewers make sure you soak them really good for the whole day so they don’t catch fire. It’s easier to turn the chicken or beef if its on two skewers so it doesn’t rotate when you try to flip it over. I prefer cooking on an open fire but this can also be done in an oven. To cook in an oven preheat it to 450F. Place the meat on skewers and do not put them on a cookie sheet. Use a pan that the skewers can span the edges of. If the meat is touching the bottom of the pan it won’t cook evenly and just might burn. Make sure the chicken is fully cooked. I like this with Turmeric Rice. Link below.
