1 whole onion chopped
4 Tablespoons of butter
Melt in pot until onions are soft and butter has golden color
Add salt and pepper for taste
1 Cup Carrots cut
4 Cups Potatoes cut into small pieces
5 Sprigs of Parsley

Bring to a boil for 10 minutes then turn to medium for 40 minutes
Stirring occasionally
Mix with immersion blender until smooth
Add cheddar cheese and stir
Eat with a smile!! :)
