Forget Pho, Banh Khot Might Be The Most Delicious Vietnamese Food

Today the boys have the chance to try one of my absolute favorite Vietnamese dishes, Banh Khot. "Banh" refers to something made with a batter or dough and "Khot," refers to the shape of the crispy "pancake." These are such a good representation of the complexity and balance that is Vietnamese Cuisine. The crunchy, oily cakes are contrasted with fresh greens and pickles. The rich flavored "pancakes" are contrasted with the sweet and sour sauce and the hot "pancakes" are contrasted with the cold toppings. Banh Khot come from the beach town of Vung Tau, but can be found in almost any city these days. These are incredibly delicious and are fairly easy to bring together. You will see how much the boys enjoy these.
