Japanese Chicken Wings 3 Ways
【Ingredients】
① Plain
2~3 Wings
Salt
Potato (or corn) starch
Cooking oil
② Spiced
* Above recipe for Plain plus:
Cooking oil
Curry powder (or garam masala for stronger flavors)
Black pepper
③ Sauced
* Above recipe for Plain plus:
2 tbsp shoyu
2 tbsp mirin
1 tbsp sake
1 tbsp sugar
Minced garlic
White sesame seeds

【Optional notes】
- Slice into wing meat around bones to assist with frying
- Season with Italian parsley and lemon

【Steps】
1) If applicable, prepare sauce for sauced variation
2) Salt and coat wings in starch
3) Fry at 160C for approximately 5 min then set on cooling rack
4) Fry a second time at 180C for approximately 5 min
5) If applicable, season with spices or coat with sauce, then serve
