Beef Tataki with Ponzu and Daikon Oroshi

Beef Tataki recipe served with a soy/citrus-based ponzu sauce and grated daikon – a great summer dish.
【Ingredients】
300g block of beef (tenderloin or thigh)
1 tbsp cooking oil or fat
tt salt and pepper
2 cm daikon root, grated and drained
whole scallions, thinly sliced
2 tbsp ponzu,
tt shichimi spice
【Steps】
1) Heat and add fat to fry pan, then sear all sides of beef block.
2) When done, let rest 5 minutes, in the meantime grate and drain daikon and thinly slice whole scallions.
3) (Optional) Put meat in freezer for about 45 minutes to firm it up and allow for thinner slices
4) Slice meat thinly (a blade with a longer, shallower profile – such as a Sujihiki – will assist with this.
5) Plate and add daikon, ponzu, scallions, shichimi.
