Rehydrating Freeze Dried Scalloped Potatoes

In this video we are rehydrating a couple pans of scalloped potatoes that we had made and freeze dried about 3 years ago.
We will be making and freeze drying a batch of this recipe soon.

Making scalloped potatoes:

Servings : 60 to 80

Ingredients
18 pounds of peeled and thin sliced potatoes -- food processor/slicer blade
24 ounces onion -- chopped
4 Tbs butter
2 pounds ham -- chopped
2 cups shredded cheddar cheese - (optional, to mix in)
10 cans mushroom soup, condensed -- 10 3/4 oz cans
24 ounces milk
2 pounds green beans, frozen -- cut into 1" pieces (optional)
1 teaspoon salt
1 teaspoon pepper
24 ounces shredded cheddar cheese about 1 oz per pan

Lightly cook the chopped onions in 4 Tbs of butter.
Mix all ingredients together in large bowl, except 24 oz of cheese for topping. Divide into 7x7 pans. For baking now or freezing to bake later without freeze drying, spray pans with cooking spray and cover the pans with sprayed foil. For freeze drying, divide into pans and add top cheese then prefreeze to make frozen slabs.

Makes about 19 to 21, 7x7 pans about 1lbs 8oz each. (weight before cooking)

Leave covered and bake at 325 - 350F until hot, about 190 - 200 degrees F, and potatoes are tender; uncover, top with cheese and bake until cheese is melted.
