how I make ghee and can it. i make two different types, regular or standard and also a more well done product, darker and richer (more nuttyish) that we like to use for baking and other uses...

ghee is shelf stable because the milk solids are cooked out, but by canning it, shelf-life is greatly expanded. let the jars cool and the hot contents (the ghee)will cool and shrink, cause a vacuum and the lid should pop down, being canned.. if it doesn't pop down, it's not canned.
