Chicken Drumsticks with Rice

Ingredients
8 drumsticks of chicken
2 1/2 teaspoons kosher salt (distributed)
1 tsp. black pepper, freshly ground
extra-virgin olive oil, 3 tbsp.
1 finely chopped onion
1 tsp cumin or cinnamon powder
1 teaspoon turmeric, curry powder, or coriander powder
white rice, 1/2 cup (any type except for sticky rice)
1/4 cup tender herbs, such as cilantro, parsley, mint, basil, and/or dill, finely chopped

Instruction
Season the chicken drumstick iwth 2tsp of oil, salt and black pepper.
In a large deep-sided skillet, heat the oil over medium-high heat.
Cook until the skin is golden brown, about 10 minutes total, rotating once halfway through. Place on a plate to cool.
Cook, stirring constantly, until aromatic, approximately 1 minute,
in the fat in the skillet with the onion, cinnamon, and turmeric.
Scrape up browned bits from the bottom of the pan with 1 1/4 cup hot water, then add in red pepper (if using)
and the remaining 1/2 teaspoon salt. salt.
Replace the chicken in the skillet and bring the liquid to a boil. Reduce heat to low, cover,
and simmer for 20–25 minutes, or until chicken is cooked through.
Cook the rice as per packet instruction.
