Delicious Salmon Ceviche Recipe

Ingredients
200g salmon
3 limes.
2 lemons.
Other sorts of fresh garden-grown tomatoes, such as Roma tomatoes, would be equally great.
If red onions aren't available, a yellow onion can be used instead.
Cilantro: Taste and add more if desired, or reduce back for a milder flavor.
Remove the seeds from the jalapeno if you prefer it less spicy.
Season with salt and pepper to taste.
Cucumber: This ingredient is optional, but I prefer it because it adds a great crunch.

Instruction
Bring a saucepan of water to a boil, then fill a bowl with ice water. Fill a medium bowl halfway with ice water and set it aside.
Place Salmon in boiling water and cook for 1 minute, or until pink and opaque.
Drain Salmon in a colander and cool for a few minutes in ice water. Drain thoroughly before chopping the Salmon into little pieces (approximately 1/2-inch).
Combine Salmon, lime juice, lemon juice, tomatoes, onion, cilantro, and jalapeno pepper in a medium bowl (you can use the same bowl) and season with salt and pepper to taste.
Refrigerate for 1 hour to let flavours to merge.
