Keto Strawberry/Blueberry Cheesecake Tart

Recipe and Instruction

Ingredients:

Pastry
½ cup butter unsalted
½ cup coconut flour
½ cup allulose or other low carb sweeteners
1 medium egg
1 teaspoon vanilla extract

Filling
8 oz cream cheese softened
1 cup whipping cream (heavy cream)
1 tablespoons allulose
8 strawberries

Prepare the pastry:
In a food processor, combine all of the pastry ingredients. Blitz all of the ingredients until they're completely smooth.
Remove the mixture from the bowl and roll it into a ball.
Refrigerate for 30 minutes after covering with parchment paper to firm up.
Preheat the oven to 180 degrees Celsius/375 degrees Fahrenheit.
Take the dough out of the fridge and cut it into four equal pieces. I used 4.75-inch silicon tart cases to make four tarts.
Form the pastry pieces into a ball, then press them into the tart cases, evenly spreading the filling.
Bake for 15 minutes, or until the edges are golden brown. After 10 minutes, check to make sure they aren't burning.
Allow cooling before placing in the fridge for 30 minutes to firm up before removing the pastry shells from the casings.

To Put Together:
Whisk the cream cheese in a medium mixing bowl.
Combine the whipped cream and the low-carb sweetener in a mixing bowl. Whisk until the mixture is completely smooth.
Fill the tart shells halfway with the filling.
Place the strawberries and blueberries on top of the cheesecake filling.
Serve and Enjoy!
