Low Carb Keto Recipe: Broccoli Soup

INGREDIENTS

1 full-fat coconut milk can (about 1.5 cups)
3 cups chopped celery
3 cups chopped broccoli florets
2 cup vegetable stock
1 teaspoon onion powder
1/2 teaspoon garlic powder
season with salt and pepper to taste
to taste red pepper flakes

INSTRUCTIONS

In a medium-sized pot, combine all of the ingredients (minus salt and pepper). Cook until the celery and broccoli are tender, about 30 minutes.
Transfer the soup to a heat-safe blender and blend until it achieves the desired consistency.
