Christmas ham, wrappedd in bread crust

This Christmas ham is the ultimate sourdough invention.
This crusted ham is something very typical in my home town in Italy, Trieste. We actually make it daily in the cafes around the town and usually enjoy it in a nice crunchy bread roll with hot mustard and shredded fresh horse reddish.
