Keto Chicken Pot Pie
In a pot pie, I prefer the texture of rotisserie chicken, but any cooked and shredded chicken would suffice.
Celery, onion, carrots, and peas are among the vegetables in this pot pie. Peas and carrots aren't exactly low-carb, but there aren't many of them in this recipe, so it works. Different low-carb vegetables, such as cauliflower, spinach, or broccoli, could be used.
Cream cheese — Adds a rich richness to this dish without being overbearing.
Heavy cream — To adjust the consistency, add more or less cream.
I prefer to use Better Than Boullion Chicken Base for my chicken broth. It has a flavor that is deep and creamy.
Xanthum Gum — Instead of a roux, we utilize this as a thickening.
