How to Make Crock Pot Zuppa Toscana

Today we share one of our favorite soup recipes, Zuppa Toscana. It is a very simple recipe and does not take a lot of time to make. Over the years, we have modified several other recipes to make this hearty soup which satisfies our palates. We hope you enjoy it as much as we do.

Ingredients
2 lb ground hot Italian Sausage
2 Tbsp minced garlic
2 small onions chopped
6 cups chicken broth
5-7 potatoes diced
1 tspn black pepper
salt to taste
2 cups Heavy Whipping Cream
1 Bag Baby Spinach (Kale can also be used)
*Shredded parmesan romano cheese for topping (or any cheese you like)

Instructions
1. in a large skillet brown and crumble Italian sausage for 8-10 minutes then add onion and garlic. Continue to cook until onions begin to soften.

2. Add potatoes, chicken broth, black pepper, and a pinch of salt to large crock pot. When finished cooking sausage, onion and garlic add it to the crock pot.

3. Gently mix ingredients and ensure they are all covered by liquid, if not add more broth or up to 2 cups of water to ensure coverage.

4. Cover and cook on Low setting for 5-6 hours or on High setting 3-4 hours

5. Remove cover, check to see potatoes are soft. If potatoes are cooked add Heavy Whipping Cream and Spinach (or Kale). Gently stir, cover and cook on HIGH setting for an additional 30 minutes.

6. Serve with preferred topping (cheese and bacon are great!)

7. Enjoy!
