Bolognese meat ragù (sauce)
I usually use the following quantities because I stock up by freezing four portions in each glass jars. More or less with these quantities I get about ten jars. With each jar I dress 280 grams of pasta (4 portions of pasta)
3 kg minced beef
500gr of already cut into cubes: currots, cellery and onion (I used a frozen mix)
300 gr of unsmoked bacon
1 liter of tomato puree
1 liter of whole milk
if milk is semi-skimmed 400 ml of double cream
3 grasses of withe or red wine
1 table spoon of powered vegetable broth (optional)
2 table spoon of triple concentrated tomato puree (optional)
olive oil
1 table spoon of salt (if you dont use powered vegetable broth add half a spoon of salt)
The ragù must be tasty
I've used a 6,5 liter pan
some glass jars to freeze portions of ragù
