Greek style chicken burgers

Makes 4 Burgers

Feta Burgers:
1 lb Ground Chicken Breast

6 oz Feta Cheese Crumbles
Fresh Mint, finely chopped

Fresh Dill, finely chopped

Minced Garlic (paste from tube suggested)

1 Sandwich Flat, finely ground (or ½ pita pocket)

1 Egg
Salt & Pepper

Tatziki style sauce:
1 Cucumber‚Ä®
1 ¬Ω cups Greek Yogurt

Fresh Mint, finely chopped

Fresh Dill, finely chopped

Minced Garlic (paste from tube suggested)

Fresh Lemon Juice (from ½ lemon)

Salt & Pepper

For Burgers:
Place ground chicken in large mixing bowl. Add salt & pepper, feta crumbles, a pinch of dill and mint, as much minced garlic as you'd like, the ground pita, and the egg. Combine with hands until thoroughly mixed. Form into 4 patties and place on wax paper covered with non-stick spray. Cook in a hot skillet with non-stick spray for about 8 minutes per side, until internal temperature is over 150.

For sauce:
About an hour before you want to eat, peel the cucumber and scoop out the seeds with a spoon. Place in a colander with salt. While the burgers are cooking, add the diced cucumber to a food processor along with the Greek yogurt. Add the remaining chopped mint and dill, juice of about ¼ of a lemon, salt and pepper, and as much garlic as you'd like. Run food processor until everything is fully incorporated. Adjust seasonings to taste.
