Appetizers Marinated mushrooms

Wmushrooms in our family. These marinated are great appetizer.. you can serve with just about anything.. potatoes, meats etc.
it it so eAsy to make .. if you planning party you can make it in advance for up to 2 weeks.. how awesome is that😁 Mushrooms still firm.. not mushy and what important to me - NOT slimy

Ingredients

32 Oz fresh mushrooms ( wash and cut bigger mushrooms so that all mushrooms pieces approximately same bite size)

1-2 onions- sliced

1 carrot - grated

1 bell pepper- chopped

1 1/2 tbsp of salt
1 - 1 1/2 tbsp of sugar
Ground pepper to taste
1/2 teaspoon ground coriander
1 teaspoon ground mustard
1/2 tbsp black peppercorns
1/2-1 tbsp of mustard seeds
1-2 dry bay leaves

At the end 1/4 cup vinegar ( I used apple sider)
1/4 cup of oil ( I used avocado)
Fresh herbse
