The Basque Cheesecake or Burnt Cheesecake was originated by Santiago Rivera at the Restaurant La Viña in San Sebastian, a city and municipality located in the Basque Autonomous Community in Spain.

Chef Santiago Rivera admittedly tried this Spanish cheesecake many times until he found the taste, texture and flavor he was going after. The New York times was right in coining it the trending flavor of 2021. This Basque Cheesecake is soft, creamy and it looks like a burnt cheesecake, thus it has been widely known as a burnt cheesecake for those who don't necessarily know the full story of it's origin.

INGREDIENTS

32 ounces (900g) full-fat cream cheese, such as Philadelphia, brought to room temp.
9 1/2 ounces sugar (about 1 1/3 cups; 270g)
5 large eggs (275g)
2 yolks (30g)
8 ounces heavy cream (about 1 cup; 230g)
2 TBLS (20g) all-purpose flour
2 tsp vanilla extract (10g)
1 tsp (3g) kosher salt
