Easy Vegan Ramen Recipe

Ready in just 25 minutes, this easy vegan ramen recipe is perfect for a quick and simple weeknight dinner recipe.

Ingredients
6 cups of vegetable broth
4 cups of water
1 leek
3 stalks of bok choy
10 oz of bean sprouts
4 oz of ramen noodles
1 tbsp of paprika
1 tbsp of onion powder
1 tsp of turmeric
20 oz of mushrooms
Red pepper flakes for garnish

Directions
1. Add vegetable broth, water, 1 sliced leek, 3 sliced stalks of bok choy (set leaves aside), bean sprouts, ramen noodles, paprika, onion powder, and turmeric.

2. Bring to a boil and cook for 10 minutes. Once done, add in sliced bok choy leaves.

3. Add 20 oz of sliced mushrooms to a frying pan. Saute on medium high heat for 15 minutes, or until mushrooms are fully softened and browned.

4. Once fully cooked, add mushrooms to ramen.

5. Let cool and sprinkle with red pepper flakes. Serve and enjoy!
