This phase of making beer helps to do several things to the liquid before you put the yeast in... It's to sterilize the wort, stop the enzymatic activity of the mash, concentrate the wort, boil off unpleasant aroma compounds, coagulate proteins so they will drop out, extract bitterness from the hops and adjust wort color and flavor
