Sweet Potato Pie
Ingredients:
• 1 stick of unsalted butter, softened
• 2.5 lbs of cooked and mashed sweet potatoes
• 1.5 cups granulated sugar (or to taste)
• ¾ cup of evaporated milk
• 1 teaspoon vanilla
• 3 eggs, beaten
• 1 teaspoon cinnamon and nutmeg (or to taste)
• 2 prepared and thawed pie shells (use traditional, not deep dish). You can parbake your shells for 10-15 minutes at 400 degrees if you’d prefer a crispier bottom crust. Your bottom crust will be soft otherwise.
Directions:
Mix butter, potatoes, sugar and evaporated milk until well blended. Add vanilla, eggs, and cinnamon and nutmeg; mix well. Pour into the prepared pie shells. Bake in a 350° oven for about 1 hour, until set.
