Sugar Free Chocolate Chip Banana Muffins
Gluten Free | Makes 12 muffins

Ingredients:
Extra-Virgin Olive Oil (EVOO) spray
3 large eggs
3 bananas, mashed
½ cup peanut (or almond butter)
125g butter (or coconut oil)
1 teaspoon vanilla essence
½ cup almond meal
1 tablespoon cinnamon
1 ½ teaspoons baking powder
½ cup chocolate chips
Pinch of sea salt

Instructions:
Preheat the oven to 175°C. Grease a muffin tray with EVOO spray or line with muffin patty pans.
Melt butter, whisk eggs, mash banana, then add to a large mixing bowl with peanut butter and vanilla. Mix until fully combined.
Add the almond meal, cinnamon, baking powder, baking soda, chocolate chips and pinch of salt to the bowl. Mix until fully combined.
Spoon the muffin mixture even across the muffin tray.
Bake for 15-20 minutes or until golden brown.
Cool for 10 minutes before removing the muffins from the tin.
