Rehydrating a batch of White Bean and Chicken Chili from 2017
This is from before we started making videos of our freeze drying.
Next time we make a batch we will make a video of it.

Freeze dried food will stay fresh for many years and be ready and waiting when you need it.

White Bean and Chicken Chili

Servings: about 30

6 cups navy beans -- Small white beans, Great Northern are good. Soak overnight in 16 cups of water with 4 Tbs. of salt - Drain and rinse
8 cups water
8 cups chicken broth - canned
2 jars salsa verde 16oz jar - Herdez
2 pounds onion -- chopped

2 tablespoons garlic -- minced or pressed
2 teaspoons ground cumin
2 tablespoons cilantro leaves, whole -- chopped fine
4 pounds chicken breast - boneless / skinless -- Grilled then chopped into about 1/2" pieces
2 cups canned diced green chiles
1 jar salsa verde 16oz jar - Herdez
1 juice of one lime - optional
2 teaspoons salt
1 tablespoon pepper

Soak beans overnight in 6 quarts of water and 4 Tbs salt then drain and rinse well.

Add 8 cups water, chicken broth, 32oz salsa verde and 2 Lbs chopped onions to the rinsed beans and simmer these first 5 ingredients very low until beans are almost tender.

Add the last 8 ingredients and continue low simmer until beans are tender, about 30-60 minutes.

Optional - For a thicker chili, chop up some corn tortillas and add for the last hour of cooking. These tortillas break down entirely and add some thickness and flavor.

12-27-17 - 2lb 10oz Costco Rotisserie Chicken, 8oz canned diced green chili, 100 grams tortilla chips - crushed, Embasa Salsa Verde (very good)

12-28-17 - 1 1/2 x size, chicken chopped then browned in oven, Embasa Salsa Verde
