Spicy Masala Rice Recipe:

Basmati Rice - 1 Cup
White Butter/ Ghee - 2 tbsp
Carrot (finely chopped) - 1 no.
Potato (finely chopped) - 1 no.
Sweet Corn - ¼ Cup
Green Peas - ¼ Cup
Salt - 1 ½ tsp

Masala:

Split Urad Dal - 1 tbsp
Chana Dal - 1 tbsp
Dry Red Chilli - 2 nos
Cinnamon - 1 inch
Clove - 4 nos
Cardamom - 3 nos
Coriander Seeds - 1 tbsp
Coconut (grated) - 2 tbsp

Tempering:

Ghee - 1 tbsp
Mustard Seeds - ½ tsp
Cumin Seeds - ½ tsp
Split Urad Dal - 2 tsp
Curry Leaves - 2 Sprigs
Dry Red Chilli - 2 nos
Lemon - ½ no.
Coriander Leaves (finely chopped) - 2 tbsp

Cooking Instructions:

1. Wash and soak the basmati rice for 30 mins. Cook the basmati rice until 90% done and set aside to cool on a plate.

2. Saute the vegetables in white butter/ ghee and salt until tender. Set aside.

3. For the masala, in the same pan saute the given ingredients and blend to a masala.

4. Prepare the tempering in ghee, by adding the given ingredients in a sequence.

5. Add the rice to the tempering, followed by the vegetables and the masala. Mix to combine well and finish with salt, a squeeze of lemon, and chopped coriander leaves.
