VEGAN RECIPES MADE EASY:
sesame orange cauliflower:
(serves two)
- 1 head cauliflower
- 2 tbsp sesame oil
- 1/2 tbsp soy sauce
- 1 + 1/2 tbsp tomato sauce
- 2 tbsp maple syrup
- 1/2 cup orange juice
- sesame seeds (as desired)

1. chop and roast cauliflower for 15 minutes at 180 degrees celsius then remove from oven
2. mix sesame oil, soy sauce, tomato sauce, maple syrup and orange juice together, pour over cauliflower, sprinkle with sesame seeds and place back in the oven for a further 20 mins
3. serve with rice or greens :)

banana rasp white choc muffins:
- 2 cups self-raising flour
- 1/2 cup oats
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- pinch of salt
- 1/4 cup almond butter, cashew butter or macadamia butter (can sub. for vegan butter)
- 2 ripe bananas
- 1/2 cup frozen raspberries
- 1/3 cup maple syrup
- 80g vegan white choc (I used Loving Earth)
- 1 tsp vanilla extract
- 1 cup oat milk
- 1 flax egg (1 tbsp flax meal mixed with 3 tbsp water and set to the side)

1. preheat oven to 190 degrees celsius & grease a 6-muffin tin
2. mix all dry ingredients together. form a well in the centre, add all wet ingredients and mix well. at the end, add white choc and raspberry and mix lightly.
3. spoon mixture evenly into the muffin tins and bake in the oven for 35 minutes

creamy pasta sauce:
- 2 + 1/2 cups roasted pumpkin (skin off + cooled down!)
- 2/3 cup cashews, soaked in boiling water for 1 hour
- 1/3 cup nutritional yeast
- pinch of turmeric
- 2 tsp veggie stock powder
- 2 tsp garlic powder
- 1/2 tsp salt
- pinch of black pepper
- juice of 1 lemon
- 1 cup water

1. blend together until smooth
2. heat in a saucepan with cooked pasta, serve hot with crispy kale if desired

chickpea scramble:
- 1 cup chickpeas, drained and rinsed
- a splash of soy milk
- 1 tbsp nutritional yeast
- a pinch of salt
- a pinch of pepper
- 1/2 tbsp of herbs (whichever are desired)

1. mash chickpeas with your hands in a bowl. add milk, nooch, salt, pepper and herbs and continue to mash until they have a 'scrambled' texture
2. place a little bit of oil in a pan, add the scramble mixture and fry on medium-high heat for 3-5 minutes. serve hot on toast and enjoy :)

peanut butter stir fry sauce:
(serves two)
- 1/3 cup peanut butter
- 1/2 tbsp soy sauce
- 1 tsp maple syrup
- 1 tbsp lemon juice
- 1/4 cup water

1. mix all ingredients together until smooth
2. pour over stir-fry and mix through over the heat
