Skip to 0:42 to see the kick, having recently been training with a ex-K1 fighter and muay thai world champion, this video is one we discussed and apparently the kick was to the ribs which winded the fighter in blue and caused him to run out of oxygen slowly and eventually keel over..

In this Muay Thai fight you can see a good demonstration of how a kick to the leg can end the fight. Knockouts in Muay Thai are not necessarily limited to punches and kicks to the head, draining the energy or disabling a limb is also a good way to end a fight, although most kicks below the hip are not counted for points, fighters use them as an attrition tactic to slow down their opponent.

Of course MMA and UFC includes a lot of other martial arts most notably Brazilian Jiu Jitsu, which is important because it gives you the tools that you need to defend yourself when you get taken to the ground, which is where A LOT of fights in the UFC are settled, by submission or tapouts so its important to know your armbar from your choke hold.. :)
