I love to cook and make blackened Cajun shrimp and Polenta Corn Grits, but it comes with a price that I must pay for.  I developed an allergy to shrimp about 10 years ago.  Not the kind of allergy that could kill you.   Sometimes after I eat shrimp I will have a skin rash and sometimes it will cause me to have sinus attack reaction.   My eyes will run and so will my nose.   I normally go into sneezing fits that can last all day and evening.  When this happens I take 2 Benadryl tablets.  This will knock me out until the next day and stop the allergy attack.

This dish is best done by sauteing them in your frying pan and using a garlic butter.

This is the price that I must pay to enjoy Blackened Cajun Mayport Jumbo Shrimp & Polenta Corn Grits every so often.  Yes it is Yummy on the tummy to the point it is one of my all time favorite foods.   This is a very easy recipe for anyone to do.

Items needed
1:  Shrimp.  I prefer Jumbo shrimp.  In any amount that you want to do.   Since I was doing this just for myself, I used 15-16 shrimp.  I always perfect to peel my shrimp before I use any seasoning and cooking them.  If you do not peel them much of your seasoning will be wasted on the shell when you peel the shrimp to eat.   So always peel shrimp before using your seasonings and cooking them.
2:  I used 2 seasonings.  
1)  Southern Flavor Charbroil Seasoning.   You may buy directly from their website.  https://southernflavor.com/

I love their Charbroil Seasoning for seafood, steaks, BBQ and any meats actually.  I found I get the best price for their seasonings by buying directly from them.   The 15 oz. canister from them is only $9.95.  On ebay someone is selling the same canister for $27.95!
2)   Lawry's Caribbean Jerk With Papaya Marinade.   OMG I love this marinade so much I think I could drink it from the bottle!  I buy this online from Walmart.  They have the best price that I can find.  Plus they offer free delivery for orders over $35.00.   I can spend more than that just buying seasoning!

3:   Corn Grits or Yellow Polenta Grits.
1 )  I used Bob's Red Mill Gluten Free Polenta Grits.   3 cups of water to a boil, add 1 stick of butter and 1 teaspoon of salt.  I used light salt.  Add in 1 and 1/4 Polenta Grits to the boiling water.   Stir well with they are cooking.  Reduce the heat while cooking do as I did by moving he pot just until the edge of the pot was on the stove eye.   In 5 minutes your grits are done.  I did my grits for about 10 minutes on a low heat with the pot off set from the eye.  That way the grits thicken up nicely and were not runny.

How to make this delicious dish
1:  Peel your shrimp
2:  In a small bowl place your peeled shrimp
3:  Cover the shrimp well with the Lawry's Caribbean Jerk With Papaya Marinade.  As you can see in the video I used a LOT.
4:  Then add the Southern Flavor Charbroil Seasoning and mix well.
5:  Place your seasoned shrimp on a plate
6:  Melt a good amount of garlic butter in your frying pan.
7:  Saute the shrimp for just a minute or so each side

I had not eaten anything that day and it was late afternoon.  Normally I season my shrimp the evening before I am going to saute them.  That way the seasoning really kicks in good.  Still by late afternoon I was a bit hungry and Wow - OMG the Cajun blackened shrimp on top of my Polenta grits hit the spot.   They were "Yummy on the tummy & finger licking good"!

This recipe my friends is so easy and delicious to make.
