Vietnamese Caramelized Pork Ribs

This is a recipe I picked up quite a few years ago. The longer it soaks in the juices the better it gets. While working on the boat in the Florida heat I'd whip up a batch of these and then just have to steam it and some rice at the same time without heating up the inside of the boat.
Recipe
Caramel sauce
1 cup sugar
1/3 cup fish sauce
1/2 cup chopped onion
1 cup water
2Tbs black pepper
1Tbs Lime or Lemon juice
Once the sauce is ready add the ribs and wait turning occasionally. This one takes a while, but it's worth it.
